I served this cake to five people in our family yesterday. The first descriptive word that was spoken after eating it by each person was….creamy. They couldn’t believe how creamy this cream cheese coffee cake was. I try to make recipes that are going to be good, I just didn’t realize how good this was going to be! Fresh Strawberry Cream Cheese Coffee Cake is a show stopper Kids. An easy to make show-stopper that can be made all year-round.
This delicious cream cheese coffee cake is made in a 9-inch round cake pan with high sides. We start the recipe by gathering the ingredients. We also want to make sure the cream cheese, butter, milk, and eggs are room temperature before we start the recipe. Having these ingredients at room temperature insures that they will mix together seamlessly with the dry ingredients that are room temperature. That little rule doesn’t just apply to a cream cheese coffee cake recipe, but any baking recipe unless of course the recipe specifically states otherwise. We are going to gather the cake ingredients and get this delicious cake started!
Fresh Strawberry Cream Cheese Coffee Cake Ingredients:
- 8 ounces cream cheese, room temperature
- 1/2 cup butter, room temperature
- 3/4 cup white sugar
- 1/4 cup milk, room temperature
- 2 eggs, room temperature
- 1 Teaspoon vanilla
- 2 cups all purpose flour
- 1 Teaspoon baking powder
- 1/2 Teaspoon baking soda
- 1/4 Teaspoon salt
- 3 cups fresh strawberries, sliced
- 1/4 cup brown sugar
- 1/2 cup chopped nuts (the nut of your choice)
Fresh Strawberry Cream Cheese Coffee Cake Directions:
Combine the cream cheese, butter, and sugar in a large bowl. Beat the ingredients together with an electric mixer until light and fluffy.
Stir in the milk, eggs, and vanilla until well combined.
Next, we’re going to measure out the flour, baking powder, baking soda, and salt and put it into a medium bowl. Stir it to combine. Grab yourself a bowl big enough for your sifter to fit on top of. Place the flour mixture in the sifter and sift the ingredients into the bowl underneath it.
Add the sifted dry ingredients to the batter and beat with an electric mixer until the batter is smooth. When you add the dry ingredients to any cake batter beat or mix till just incorporated. If your wet ingredients are thoroughly blended, there’s no need to add the dry ingredients and mix any longer than is needed to incorporate them, unless stated in the recipe. The longer you beat the batter after the dry ingredients are added, the tougher the cake will be.
Grease and flour a 9-inch baking pan with high sides.
Spread half the batter into the bottom of the pan. The batter is very thick. It works best to put little blobs of batter across the whole pan and then spread them with a knife to cover the bottom of the pan.
Spread the sliced strawberries evenly over the batter, but keeping them away from the edges of the pan. I tried to keep the berries away from the edges of the batter so that when the batter rose up it sealed the berries in the cake.
Spoon the remaining batter over the strawberries.
Spread the batter evenly with a knife so the strawberries are completely covered with batter. I used a spatula that I wet just a tiny bit with water to help smooth the top of the cake batter, it worked great. You can use a butter knife too.
Place the brown sugar and nuts in a small bowl. Stir to combine. You can use any nut you like, I choose almonds because I thought it would go well with the strawberries. Sprinkle the mixture over the top of the batter to completely cover it. Bake in a 350-degree oven for 40 minutes. Remove your cream cheese coffee cake from the oven to cool completely on a wire rack.

- 1/4 Teaspoon salt
- 3 cups fresh strawberries, sliced
- 1/4 cup brown sugar
- 1/2 cup chopped nuts
Instructions
- Preheat oven to 350 degrees. Grease and flour a 9 inch baking pan with high sides.Combine the softened cream cheese, room temperature butter and 3/4 cup white sugar in a large bowl. Beat the ingredients together until they are light and fluffy. Stir the room temperature milk, eggs and vanilla into the batter.Sift together the flour, baking powder, baking soda and salt. Add the sifted ingredients to the batter and beat with an electric mixer until the batter is smooth.Spread HALF the batter into your prepared greased and floured high sided baking pan. The batter is very thick. It works best to put little blobs of batter across the pan and then spread them with a knife.Spread the sliced strawberries evenly over cake batter. Drop remaining batter with a spoon over the berries and smooth it out with a knife to cover them. Mix the brown sugar and nuts together in a small bowl., sprinkle evenly over cake. Bake 40 minutes. Remove the cake from the oven to a wire rack, cool completely or serve warm.
