At 65 years old this is the first time I’ve ever made a salmon fillet. Sometimes I just want to kick myself in the rear end and say…why did you wait so long? The first thing that amazed me about this recipe for Herbed Lemon Salmon was how fast it came together. I mean like…FAST! I’m so use to waiting at least an hour for a chicken, beef or pork recipe to be done in the oven or all day if I’m using the crock pot that it just amazed me that this delicious and flavorful salmon recipe was done in minutes.
The lemon, the herbs the butter…everything came together beautifully to make the most flavorful fish recipe I’ve ever made. The second thing that came to my mind was, this is the perfect easy dinner to make on a busy weeknight. Easy as in make a salad with your favorite dressing, add crusted bread and another easy side dish like Green Beans Asian Style and dinner is ready!
Before we get to the recipe, let’s look at some helpful information about buying salmon in the grocery store and storing it (freezing or refrigerating it) when we get home.
How To Choose Salmon in The Grocery Store For Your Perfect Lemon Herb Salmon
According to this article from Epicurious you should be looking for the following criteria when shopping for fresh salmon:
- You should be looking for the pleasant suggestion of a salty ocean breeze.
- Look for salmon that appears moist instead of dried out. Moister content is a great indication of freshness and how carefully the fish was handled.
- Avoid salmon with any browned spots on the belly or around the edges of the fillet or signs that the skin has started to brown and curl up.
- Look for vibrantly colored flesh from deep shades of red to coral in color. Bright hues, mean fresh fish.
How Long Can I keep Raw or Cooked Salmon in the Refrigerator Or Freeze?
LeafTV says to use frozen, raw salmon within 3 months of freezing it and use frozen cooked salmon within 6 months of freezing it. Herbed Lemon Salmon Ingredients:
- 1 pound skinless salmon cut into portions of your choice
- 1 lemon
- 1/2 teaspoon salt
- 1/2 Teaspoon black pepper
- 1 Tablespoon fresh Dill
- 1 Tablespoon fresh Tarragon
- 2 Tablespoons butter, softened
- 1 Tablespoon fresh Parsley
Preheat your oven to 350 degrees before you start the recipe so it comes up to temperature and is ready when the Salmon is baked for about 7 minutes in the oven. I used my small counter top convection oven instead of heating up the big oven. It worked great for the short amount of time the salmon is baked.
Herbed Lemon Salmon Recipe Steps:
Recipe Step One:
Zest the lemon with a grater or lemon zester and put one Teaspoon of the lemon zest in a small bowl. Cut the lemon in half and juice the lemon, set the juice aside. In a small bowl combine the lemon zest, Dill Weed, Tarragon, fresh parsley, salt and pepper and softened butter. Stir the ingredients together until they are well combined. Spread butter mixture over the salmon evenly. Place an oven safe 12 inch skillet (cast iron or all stainless steel pan) over medium heat on the stove. Add the salmon, herbed side DOWN in the skillet.
Recipe Step Two:
Cook the salmon, herbed side down for three minutes in the skillet or until golden brown. Turn the salmon over and pour the lemon juice over the salmon. Plan the oven safe pan in the oven to cook for 3 – 7 minutes or until the salmon flakes easily when tested with a fork. If you don’t have an oven proof skillet , transfer the salmon to a baking dish and place the dish in the oven to finish cooking the salmon for 3 – 7 minutes.

Lemon Herbed Salmon
Ingredients
- 1 pound skin on or skin off Salmon fillet, cut into 4 pieces
- 1 large lemon, zested reserve the zest, juice half the lemon and reserve the juice
- 1 Tablespoon fresh Dill Weed, snipped
- 1 Tablespoon fresh Tarragon , snipped
- 1 Tablespoon Parsley
- 1/2 Teaspoon Salt
- 1/2 Teaspoon black pepper
- 2 Tablespoons butter, softened
Instructions
- Preheat your oven to 350 degrees. Rinse the Salmon fillet and pat it dry. Using a small bowl combine the lemon zest, herbs, salt and pepper and butter. Stir to combine the ingredients. Spread the mixture evenly over the salmon. Place a 12 inch nonstick skillet over medium heat. Add the salmon herbed side down in the skillet. Cook for 3 minutes or until until golden brown. Turn the salmon over, pour the lemon juice over the salmon fillet. Place the pan your preheated 350 degree oven and bake for 3 - 7 minutes or until the salmon flakes easily with a fork. Serve immediately.
