Cobb Salad with Creamy Avocado Dressing
To me, a Cobb Salad looks a whole lot like a deconstructed Chef’s Salad. As a matter of fact the only difference between the two is a Cobb Salad contains avocado and a Chef’s Salad doesn’t.
Now, you’ll notice my Cobb Salad doesn’t have an actual avocado sliced in the salad. I pretty much covered the avocado requirement so this salad could be called a Cobb Salad with the Creamy Avocado Dressing. It’s just in a different form, but it’s still there.
The dressing is very easy to make using a food processor. Like, minutes, seriously. Give the ingredients a whirl until the mixture is smooth, then add the olive oil in a slow ,steady stream through the spout at the top until it’s blended well. Homemade salad dressing with nothing added but fresh ingredients, there’s nothing like it.

Cobb Salad with Creamy Avocado Dressing
Ingredients
Cobb Salad Ingredients
- 1 head romaine lettuce torn (or cut) into pieces
- 6 slices thick cut bacon fried and crumbled
- 15 - 20 cherry tomatoes ,cut in half
- 4 hard boiled eggs, chopped
- 2 oz bleu cheese, crumbled
- 1 medium size cooked boneless chicken breast, sliced
Creamy Avocado Dressing
- 2 Tablespoons Seasoned Rice Vinegar
- 11/2 Teaspoons kosher salt
- 1/2 Teaspoon black pepper
- 1 avocado, diced
- 1/4 cup sour cream
- 1/4 cup heavy cream
- 1/4 cup olive oil
Instructions
Creamy Avocado Dressing:
- Place all dressing ingredients ( except the olive oil ) in the bowl of a food processor. Blend until well combined and there are no lumps in the mixture. With the food processor on, add the olive oil in a slow steady stream to the ingredients in the bowl. Process until well blended. Remove from the food processor bowl and refrigerate covered until ready to use.
- Cobb Salad:Place the romaine lettuce on top of a large platter or dish, covering the surface. Place each salad ingredient ( Bacon,cherry tomatoes,hard boiled eggs, bleu cheese and cooked chicken) in a single row on top of the lettuce. Drizzle the Avocado Dressing over top or serve it on the side. Serve immediately or cover and refrigerate for later.
