Blueberry Cake for Two
Being the blueberry lover that I am, I was so happy to find a recipe that makes two serving with the capability of making more if the need arises. You’re going to love this recipe for two reasons, it can be made in literally minutes, which is great for last minute dessert options and second, the flavor. For such a fast , easy dessert, it’s amazing! Blueberry Heaven!! There is double the amount of blueberries to cake in this delicious dessert. I used frozen berries and it turned out terrific. You can substitute other berries for flavor options as well. Add a scoop of ice cream and you have the perfect treat for two anytime of the year. Whether you make this dessert as a serving for 2 or 6, it’s definitely a Keeper!
We start the recipe by greasing two ten ounce ramekins. You can also use two individual single serving gratin dishes if you have them. Set the greased dishes aside. Get the cake ingredients together and measure them out.
Blueberry Cake For Two Ingredients:
- 1/4 cup all purpose flour
- 1/4 cup white sugar
- 1/2 Teaspoon baking powder
- a pinch of salt
- 1/4 cup milk
- 1 Tablespoon butter, melted
- 1 cup blueberries, divided fresh or frozen, if frozen do not thaw the berries
- 1/4 Teaspoon lemon juice
- a sprinkling of raw sugar on the top
Place half the blueberries into the two greased ramekins and set them aside.
Combine the flour, sugar, baking powder, and salt in a small bowl. Stir in the lemon juice, milk and butter just until incorporated.
Divide the batter between the two greased ramekins with the blueberries in them. Top the batter with the remaining blueberries. Sprinkle the top of the cakes with raw sugar for a slight crunch if you like.
Bake the cakes in a preheated 375 degree oven for 25 – 30 minutes or until golden brown. You may want to put them on a cookie sheet to bake them so there’s no chance of them tipping on the oven rack while they bake.

Ingredients
- 1/4 cup all purpose flour
- 1/4 cup sugar
- 1/2 teaspoon baking powder

- 1 cup blueberries divided

- a sprinkling of raw sugar on the top optional
Instructions
- Preheat oven to 375 degrees.

- Combine the flour,sugar,baking powder and salt in a small bowl. Stir in the lemon juice, milk and butter just until incorporated.

Oh wow, this is as good as it gets! I was not expecting it to have this much flavor. I changed it just a little; added 1/2 teaspoon of lemon since we love lemon and then I put some ground walnuts on top. And then topped it all off with fresh whipped cream. I loved that it didn’t have an egg and also No corn starch to thicken the blueberries. It didn’t need it. It was perfect and wonderfully delicious and I’m definitely printing this out and keeping it with my favorites.

It was tasty, but heavy.
I doubled the recipe, but it only made 3 rather small ramekins. I measured 10oz of liquid into my ramekins, and that overflowed. So, I thought double it and make 6. Nope. Barely made 3. Definitely needs more lemon or less sugar. Otherwise it was okay for an afternoon alone with a cup of coffee after a day of house cleaning.
Can you use almond milk in place of the regular milk?
I found this online for you, hopefully this answers your question Janie..For baking, almond milk can replace regular milk. When the recipe calls for milk, simply use almond instead. There aren’t any differences in measurement. Make Your Own. Consider making your own almond milk, as it is easy to do. The ingredients required are almonds, and spring water.

I want to make this as a surprise for my husband so want to make it while he is not home . Can it be made ahead of time? If so can I reheat to warm it up or will that alter the taste too much. Thanks for any insight, Virginia
Irgina I’ve never made it ahead and reheated it but I really don’t see a problem in doing that. Are you going to use a microwave to reheat?
