The Best Potato Soup
The Best Potato Soup…a thick , creamy, hearty soup that’s absolutely delicious! I made this soup the day I made the Sweet Potato Dinner Rolls. It was the perfect Fall dinner!
I love dinners like this. They make you feel all comfy and ready for the cool of Fall to come. This is a very satisfying dinner loaded with potatoes, bacon and kale.
The soup base is made with chicken broth which is thickened with a roux made of flour, butter and cream. If you don’t have cream you could substitute half and half.
As with any soup I make, I wait till all the ingredients are in the pot and simmering then I tweak it to my liking. Everybody’s taste are different, it’s just part of making a recipe yours.
Serve this delicious soup with homemade bread or rolls and sit back and enjoy Fall.

The Best Potato Soup
Ingredients
- 1 large onion diced
- 1/2 cup thinly sliced carrots
- 1 lb bacon chopped
- 2 stalks celery diced
- 3 cloves garlic minced
- 8 potatoes peeled and cubed
- 4 cups chicken broth or enough to cover potatoes
- 3 Tablespoons butter
- 3 Tablespoons flour
- 1 cup heavy cream or half and half
- 1 Teaspoon dried tarragon
- 1/3 cup kale can use frozen thawed Kale as well, stems remove and chopped fine
- Salt and pepper to taste
Instructions
- Cook the bacon in a dutch oven until done. Remove the bacon, drain off all but 1/4 cup of the bacon grease. Cook celery, carrot and onion in the 1/4 cup bacon grease until soft. Stir in the minced garlic, cook for 1 minute more. Add cubed potatoes, toss to coat. Saute the potatoes 3 or 4 minutes. Place the fried bacon back in the pan. Add enough chicken broth to the pan to cover the potatoes, cover and simmer until potatoes are tender.
- In a heavy duty sauce pan, melt the butter over medium heat, whisk in the flour, cook and whisk the mixture for 2 minutes to remove the flour taste. While still whisking add the cream in a slow stream to the flour mixture. Cook and whisk until mixture thickens, add the Tarragon and Kale to the pot. Stir the cream mixture into the potato mixture. Season with salt and pepper to your liking.
The soup was absolutely delicious, I will definitely make it again!

It is SO delicious. I used a can of full fat coconut milk instead of the cream and minced a bunch of collards instead of the frozen kale. Otherwise followed the directions. Our entire family downed this soup so fast — kid and husband approved. Thank you!
I didnt have milk or butteri used ghee and jut mixed the soup broth w the ghee flour simply marvelous! I will make it again when i have all the ingredients!
This is the best soup I ever made. I omitted the bacon and added a little smoked paprika instead. Super delicious and I will make it again and again.

This was delicious! I used a can of unsweetened coconut milk in place of the heavy cream and spinach in place of kale (because that’s what I had on hand). I will definitely make this recipe again.

No garlic (I love garlic, but latex allergy, bummer)
Doubled Tarragon
Replaced milk w goat milk
I expected good, but this is the best, so full of flavor, even with the modifications.

Minus the carrots and kale (which I may try) this is exactly how I’ve made my potato soup for YEARS! Every time I make it my husband takes leftovers to work the next day and his co-workers are always asking me for the recipe. It is the BEST soup ever!

Love your recipes!! I’m in North Dakota for summer. I took onion, carrots, and an enormous potato From our garden to make this soup!! It was wonderful. I had no tarragon so seasoned with dill, rosemary and thyme! Easy to make, delicious for a cold fall dinner!! Thanks!!

I didn’t have chicken stock but I used beef instead and it made it dark, needed more flavor ( I might add a little more salt and pepper to it)

I find a lot of recipes that inspire me to try it. While stuck at home on a (SUPRISE) 10 day isolation period i have been trying to be good and not leave the house. So when i checked to see what i actually had in the fridge and pantry, then came across this recipe, I saw an almost perfect match. I was out of fresh garlic and no kale. I substituted dry garlic powder and canned green. Also, i decreased potatoes in half and added turkey sausage. One of the best soups in a long time. Thank you very much. I will check later to see what other ideas i can get from you.
