The Best Potato Soup
The Best Potato Soup…a thick , creamy, hearty soup that’s absolutely delicious! I made this soup the day I made the Sweet Potato Dinner Rolls. It was the perfect Fall dinner!
I love dinners like this. They make you feel all comfy and ready for the cool of Fall to come. This is a very satisfying dinner loaded with potatoes, bacon and kale.
The soup base is made with chicken broth which is thickened with a roux made of flour, butter and cream. If you don’t have cream you could substitute half and half.
As with any soup I make, I wait till all the ingredients are in the pot and simmering then I tweak it to my liking. Everybody’s taste are different, it’s just part of making a recipe yours.
Serve this delicious soup with homemade bread or rolls and sit back and enjoy Fall.

The Best Potato Soup
Ingredients
- 1 large onion diced
- 1/2 cup thinly sliced carrots
- 1 lb bacon chopped
- 2 stalks celery diced
- 3 cloves garlic minced
- 8 potatoes peeled and cubed
- 4 cups chicken broth or enough to cover potatoes
- 3 Tablespoons butter
- 3 Tablespoons flour
- 1 cup heavy cream or half and half
- 1 Teaspoon dried tarragon
- 1/3 cup kale can use frozen thawed Kale as well, stems remove and chopped fine
- Salt and pepper to taste
Instructions
- Cook the bacon in a dutch oven until done. Remove the bacon, drain off all but 1/4 cup of the bacon grease. Cook celery, carrot and onion in the 1/4 cup bacon grease until soft. Stir in the minced garlic, cook for 1 minute more. Add cubed potatoes, toss to coat. Saute the potatoes 3 or 4 minutes. Place the fried bacon back in the pan. Add enough chicken broth to the pan to cover the potatoes, cover and simmer until potatoes are tender.
- In a heavy duty sauce pan, melt the butter over medium heat, whisk in the flour, cook and whisk the mixture for 2 minutes to remove the flour taste. While still whisking add the cream in a slow stream to the flour mixture. Cook and whisk until mixture thickens, add the Tarragon and Kale to the pot. Stir the cream mixture into the potato mixture. Season with salt and pepper to your liking.
What are the orange pieces, are they carrots?
Yes Roberta,thin sliced carrots, I guess my senior moments are getting long. I forgot them in the recipe, fixed it!
Potato soup looks pretty good….Now when the whole pot is good and hot, remove it from the heat, add a pound of frsh/thawed cod . cut into 1-2 inch pieces…It will cook while the soup cools…..OMG it is the best fish chowder you ever had in your life……no it does not taste fishy…cod is better than that…………
What kind of potatoes?
Caro whatever potato you have is fine. I just used cooking potatoes, not baking potatoes.
Tried this recipe and it was amazing. Super easy. The roux thickened up the soup perfectly. The flavor was everything one would want in a hearty potato soup. Delicious. 5 Star recipe.

It cooks slightly Jen, that’s why you put it in at the end. You don’t want it to cook down to nothing, you want it to still have some body to it .
Made this soup and it was absolutely delicious. I only used 4 slices of bacon and I think it was the perfect amount—a bit healthier and it had a good bacon flavor without being overwhelming. All the family enjoyed it too. Thanks for the great recipe!

I cant stomach the kale. What about spinach? I have a fussy ten year old. What about just omit the green veggies.? Idk
Spinach is good to Danielle. Make it yours, if you don’t want veggies leave them out sweetie.
I just made this today and it turned out so good! It is rich and thick full of bacon flavor . It takes a bit of prep but it’s so worth it. Next time I will add more carrots and chicken broth. I used frozen Kale and squeezed out the water real good and it was fine. We will have it tonight with left over breaded pork chops.

I have no choice but to eat gluten free. Would it make any difference to thicken with corn starch or other gf flour instead? This sounds so incredibly good, I’d love to attempt to make it!
LeAnn I found this for you, you can thicken it with corn starch…Thicken soup with corn starch
You can use flour or cornstarch to thicken soup by first blending it with cold water or broth. Called a slurry, you then stir the thickened liquid slowly into the hot soup. A slurry made from equal parts flour and water is also called a white wash, since the flour may alter the color of the soup or stock.
I se corn starch all the time to thicken things, but if you want to make roux’s you can use rice flour. It is gluten free or Bob’s Red Mill has other Gluten Free Flour that you could purchase for your diet to have on hand for your reference.

I made this vegetarian by using 1/4 cup olive oil in lieu of bacon and veggie broth; it was great! My toddler even ate it!

I am terrible at decision-making, but think I’m going to run and get some kale and make this. I guess my question is re this vs your other potato soups. Does this one have a distinctly different taste than your one with the roasted peppers? Would it be sort of a waste to do both (red peppers & kale)?
