Sweet Cherry Fool is an absolutely delicious dessert made with fresh sweet cherries, it’s the perfect end to any meal.

Cool ,creamy, light in texture and delicious…that’s what we want in a Summer dessert. This cool, creamy treat is so good it passed the “kid” test. My son and two of his friends went absolutely crazy when they tasted this. Sweet Cherries nestled in a light and creamy mixture of whipped cream and yogurt brought them to their knees.
I picked up fresh sweet cherries at the grocery store this week with making this divine dessert in mind. If you don’t have fresh cherries on hand but do have frozen, you could use those as well ,thawed first. The cherries are cooked on top of the stove with sugar ,cornstarch, salt and lemon juice to make a slightly thickened mixture that is cooled and refrigerated. That mixture is folded into whipped cream and yogurt that has been beaten until thick and cream. Light, refreshing, delicious and not overly sweet, Sweet Cherry Fool makes fantastic use of the Summer’s summers bounty , let’s gather the ingredients and make it together.
Sweet Cherry Fool Ingredients:
- 3 cups sweet cherries, pitted
- 1/3 cup white sugar
- 1 Teaspoon cornstarch
- pinch of salt
- 2 Teaspoons lemon juice
- 1 1/4 cups heavy cream
- One 5 -6 ounce container regular or non fat vanilla yogurt
- 1 Teaspoon vanilla
Place the pitted sweet cherries in a medium size saucepan.
Add the sugar, cornstarch, salt and lemon juice to the cherries in the pan. Cook the mixture over low heat while you stir until the sugar dissolves, the cherries are softened and the juices have thickened slightly. Remove the pan from the heat, place the mixture in the pan in a bowl and let it cool to room temperature. Using a shallow bowl such as a pasta bowl will help the cherries to be in a single layer and cool quicker for you. After the cherries have cooled to room temperature, cover them with plastic wrap and refrigerate them until cold.
Place the cream into a large bowl. Beat the cream with an electric mixer until soft peaks foam. Add the yogurt and vanilla to the cream you have beaten to soft peaks. Beat the ingredients together until you have medium peaks and the mixture is creamy and thick. Gently fold the sweet cherries into the whipped cream using a spatula just until streaks of sweet cherries form. You don’t want to mix it into the whipped cream totally, fold just until you have streaks in the whipped cream. Spoon the Sweet Cherry Fool into dessert dishes. Refrigerate the dessert until cold. When you’re ready to serve, garnish as desired.
Don’t limit this cool, creamy dessert to just the hot months of the year. It would be perfect as a dessert to serve after a big holiday dinner during the Winter months as well. Sweet Cherries may not be in season during the Winter months, but you can use sweet frozen cherries thawed, to make it as well. This one’s a keeper no matter what time of the year you make it, Enjoy!

You don't want to mix it together completely. Place in dessert dishes. Refrigerate until cold, garnish and serve.
