Spicy Tomato Rice
Spicy Tomato Rice gives you all the flavors of Mexico in an easy to make side dish. It’s the perfect accompaniment to your favorite Mexican entrees. We don’t want to limit this fantastic rice dish to just Mexican food. It would also be amazing with any meat you grill, bake or roast.
Spicy Tomato Rice has all the spices we love about Mexican food…including Jalapeno Peppers. The recipe uses a 1/3 cup of Jalapenos , if that’s too much for you , feel free to cut the amount back to what would make this dish enjoyable to you. I’m not a person who enjoys “heat” in a dish, spice yes, heat no. If you don’t enjoy Jalapeno at all, leave it out and replace it with a touch more green pepper.
If you do want a little heat but not as much as a Jalapeno would give you, try using an Anaheim or Serrano Pepper. They don’t have as much heat as a Jalapeno does. It’s your kitchen Sweetie, make it your way. Let’s gather the ingredients for Spicy Tomato Rice and make it together.
Spicy Tomato Rice Ingredients:
- 1 Tablespoon Butter
- 2 cups white, long grain rice
- 1/3 cup diced Jalapenos
- 1/3 cup diced green onion
- 1 clove garlic, crushed
- 1 Tablespoon chili powder
- 1/2 Teaspoon Chipolte, or more to taste
- 1 Teaspoon Cumin
- 1/2 Teaspoon salt
- 2 1/4 cups chicken broth
- 1/2 cup tomato sauce
Place the butter in a medium size saucepan on the stove over medium high heat. Cook the butter until it’s melted. Add the rice, Jalapeno Peppers, onions and garlic to the pan. Saute the ingredients for about 2 minutes, coating the grains of rice with butter.
Stir the chili powder, chipolte, cumin and salt into the ingredients in the pan.
Add the chicken stock and tomato sauce to the pan. Turn the heat to medium-high and bring the ingredients to a simmer. After the ingredients start to simmer, turn the heat down to low, cover the sauce pan with a lid and cook the ingredients for 20 minutes. Then, 20 minutes, turn the heat off and let the ingredients sit in the pan covered for nine minutes. After the nine minutes are up, remove the lid from the pan and fluff the rice with a fork.

Spicy Tomato Rice
Ingredients
- 1 Tablespoon butter

- In a saucepan on low heat, melt the butter and add the rice, peppers, onions and garlic. Saute the ingredients for 2 minutes, coating the grains of rice with the butter. Stir in the chili powder, chipotle, cumin and salt.
- Add the chicken stock and tomato sauce to the pan. Turn the heat to medium high and bring the ingredients to a simmer. Turn the heat down to low, cover the pan with a lid and cook for an additional 20 minutes. After 20 minutes, turn the heat off and let the ingredients sit in the pan covered with a lid for 9 minutes. Uncover, fluff the rice with a fork and serve hot.
