Lemon Chicken is so good! It is easy to make and very moist, tender and has a fantastic flavor to it.
This is the first time I’ve ever made Lemon Chicken and it won’t be the last, This was sooooo good. It was very moist and tender and had a fantastic flavor to it. You can use this recipe with boneless chicken breast or bone in split or whole breast. The baking time for boneless chicken breast will be about 40 minutes. I used bone-in split breasts that were huge which took more baking time. Plan for that if your using bone-in split or whole chicken breasts as well. It was totally worth the wait and I’ll be making this again.
Lemon Chicken Options
The first thing I thought of when I tasted Lemon Chicken were the possibilities. I love the options. Most of the time when we buy chicken breast they’re large family packs that I bring home and break down to freeze. The first option possibility I thought of was making more Lemon Chicken than I needed for dinner and using it for other dinner ideas. I’d love to make this recipe using some of the chicken to make chicken salad with. What an amazing flavor it would give it!!
I also thought about how wonderful it would be to make sandwiches with the lemon flavored chicken or slicing this delicious chicken breast and putting it into dinner salads. Delicious! Before we can make those possibilities we have to make Lemon Chicken and we’re going to do that together. Let’s gather the ingredients.
Lemon Chicken Ingredients:
- 1/4 cup extra virgin olive oil
- 3 Tablespoons minced jarred garlic
- 1/3 cup chicken broth
- 2 Tablespoons fresh lemon juice
- 1 Tablespoon lemon zest
- 1 1/2 teaspoons dried oregano
- salt and pepper to taste
- 4 chicken breast, skin on, can use boneless or bone in.
- 1 lemon, cut into 8 wedges
We start Lemon Chicken by placing the olive oil and minced garlic together in a saucepan over medium heat for about one minute. Take the pan off the heat and add the chicken broth, lemon zest, and lemon juice.
Add the Oregano and salt to the pan, whisk all these lovely ingredients together.
Pour the mixture into a 13×9 inch baking pan or a large ovenproof skillet, a cast iron skillet would work great. Place the chicken breast in the pan, baste the chicken with the liquid, if you’re using bone-in chicken, place the chicken skin side up in the pan. Sprinkle the chicken generously with salt and pepper. Cut the lemon into 8 wedges arrange them around the pan.
Bake boneless chicken breast about 40 minutes, the bone-in breast will take an hour, depending on the size of the breasts. Baste the chicken halfway through baking. Bake the chicken until it is browned on top.
