Greek Salad with Shaved Cucumber is an amazing salad packed full of flavor.
This is an amazing salad anytime of the year and absolutely affordable during the Summer months when gardens are in full swing and your favorite farmers markets are bringing you fresh produce. This is why we grow gardens Kids, to enjoy all the glorious flavors of Summer, use them while they are here. Before we get to the recipe, let’s talk about a few of the salad ingredients for a minute.
Why Are We Using English Cucumbers?
We’re using English Cucumbers for several reasons. An English Cucumber is sweeter than a regular cucumber. They also have thinner outer skins than the cucumbers we’ve (and I’m sure you too) have planted in our gardens so they don’t have to be peeled. The seeds are also smaller in an English Cucumber which makes it super easy to use your vegetable peeler to make the cucumber strips for the salad. I doubt very much if you would be able to use the vegetable peeler to make the strips for the salad using a regular cucumber, the seed size would make a mess of the strips.
Can I Substitute Fresh Oregano For The Dried Oregano in The Recipe Or Vise Versa?
Absolutely you can. The rule of thumb is that you can substitute 1 Tablespoon of a fresh herb for 1 Teaspoon of a dried herb in a recipe. Just remember there will be a slight difference in the brightness of the herb flavor when you substitute a fresh herb for it’s dried version. Greek Salad with Shaved Cucumber Ingredients:
- 2 English Cucumbers
- 1 pound tomatoes ( you can use any tomato you like, less acidic, red, zebra tomatoes…etc)
- 2/3 cup large green olives
- 1/2 cup green onions, sliced
- 1/3 cup Feta Cheese, crumbled
- 3 Tablespoons olive oil
- 2 Tablespoons white wine vinegar
- 1 Teaspoon cracked black peppercorns (substitute ground black pepper if you’re not partial to peppercorns)
- 2 Teaspoons fresh oregano leaves or 1 Teaspoon dried oregano
Greek Salad with Shaved Cucumber Recipe Steps:
Recipe Step One
Shave your unpeeled English Cucumbers with a vegetable peeler into long strips until you have about 6 cups of cucumber strips.
Recipe Step Two
Arrange the cucumber strips, wedged tomatoes and olives on to a large platter. Sprinkle the crumbled Feta Cheese, sliced green onion and oregano over the cucumbers.
Recipe Step Three
Sprinkle the salad with pepper and salt. Drizzle olive oil and vinegar over the salad and serve.

Greek Salad with Shaved Cucumber
Ingredients
- 2 English cucumbers
- 1 pound tomatoes (yellow, red ect... ) your choice cut into 3/4 inch wedges
- 2/3 cup pitted Castelvetrano olives (or your favorite large green olive)
- 1/2 cup sliced green onions
- 1/3 cup feta cheese, crumbled
- 2 Teaspoon dried oregano
- 3 Tablespoons olive oil
- 2 Tablespoons white wine vinegar
- 1 Teaspoon cracked black peppercorns or ground pepper
Instructions
- Shave cucumbers into long strips using a vegetable peeler to equal about 6 cups.
- Arrange cucumber strips, tomatoes, and olives on a large platter.
- Sprinkle with green onions, feta, and oregano.
- Drizzle with oil and vinegar. Sprinkle with black cracked peppercorns and salt.
