Smoked Sausage Corn Chowder Ingredients:
- 1 medium onion diced (about 1 cup)
- 1/2 green bell pepper, diced
- 1/2 red bell pepper, diced
- 1/4 cup all-purpose flour
- 1/2 Teaspoon salt
- 4 cups of milk
- 1 can (15.25oz) whole kernel corn, drained
- 1 package smoked sausage (use can use beef, chicken or pork)
- 2 cups cooked cubed potatoes
- shredded cheese for garnish

Place the smoked sausage slices, onion and red and green pepper In the bottom of a Dutch oven. There’s no need to add butter or oil to the dutch oven, the smoked sausage will provide it as it cooks. Cook the ingredients in the Dutch oven until the onion and peppers are softened and sausage has released its oil. When the onions and peppers are softened and the sausage has browned slightly, sprinkle the flour, salt and pepper over the mixture and stir to mix and cook for 1 minute. Add milk and then stir constantly. Then, increase the heat to medium. After that, stir until the chowder comes to a boil and thickens. Following that, add the corn and cubed potatoes to the Dutch oven. Reduce the heat and simmer until the potatoes and corn are heated through. Three years later, and I still use this as one of my go-to soups! I hope it’s ok to share an update. I discovered Kraft Triple Cheddar blend. Since sprinkling cheese on top prior to serving really does add great flavor, I thought a handful or two IN the soup (added at the very end before serving) couldn’t be a bad thing. It adds a little thickness and richness to the batch. I’d caution about not adding too much, as cheddar can become a bit overwhelming. Since this soup reheats beautifully, having the cheese already in it eliminates the need to add it separately if using it as meal prep for lunches or dinners.
It’s one of our favorites too Vicky!! If you want another good potato soup made in a crock pot try the Crock Pot Potato Soup. Made it again lastnight, it’s wonderful with roasted red peppers in it and it’s made with cream. It’s decade!!! Oh and this one uses Parmesan Cheese Cheese in it!
