Soft and Chewy Oatmeal Raisin Pecan Cookies
When I told my friend that I loved to bake, the first question she asked me was…can you make oatmeal cookies? Oatmeal cookies with raisins and nuts in them?
Yes I can make them, my only probably was I didn’t have a recipe that I liked. Up until now, every recipe I tried yielded oatmeal hockey pucks.
Cookies you’d have to dunk to make soft. I wanted an oatmeal cookie recipe that would give me what I love about a fantastic chocolate chip cookie recipe, a soft, chewy cookie.

Soft and Chewy Oatmeal Cookies With Raisins and Pecans
Delicious soft and chewy oatmeal cookies the whole family will love!
Servings: 36
Ingredients
Wet ingredients
- 1 cup unsalted butter softened
- 1 cup sugar
- 1 cup dark brown sugar firmly packed
- 2 large eggs
- 2 teaspoons vanilla
Dry Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
Stir in
- 1 cup raisins
- 1/2 cup pecans
- 3 cups quick oats
Instructions
- Preheat oven to 350 degrees. Cookie Sheet sprayed with nonstick baking spray or lightly oiled.
- 1. In a large bowl, whisk all the dry ingredients together and set aside.
- 2. In the bowl of an electric mixer, combine the wet ingredients until just incorporated on low speed. On medium speed, cream the wet ingredients until light and fluffy and light in color.
- 3. Stir the dry ingredients into the wet ingredients until just incorporated and no flour is visible.
- 4. Stir in the quick oats,raisins and pecans to the dough.
- 5. Measure out a level 2 Tablespoons of dough ( I have a 2 Tablespoon measuring spoon I use). Place the dough on the baking sheet sprayed with nonstick spray or greased lightly with oil. Bake on the center rack for 11 to 13 minutes until golden but still moist underneath cracks on top of the cookie. Remove from oven, let sit on the cookie sheet for 2 minutes, remove to cooling rack to cool completely.

My Grandmother used to make Oatmeal raisin cookies with pecans and would even add coconut. They were the best. Will have to try. My favorite cookie, along with her iced sugar cookie.

Can these made as cookie bars? I also want to add some seeds and chocolate chips (yes, with the dried fruit)….Would that make them too crumbly? I think these would make great trail snacks and treats for my kids!!
Sorry I’m just getting to your question Khursten. This is a very soft cookie so it could probably stand to have the seeds in it without a problem. The only thing i can say is experiment with it as a bar and see what happens.
Can I leave out the pecans?

Hi Bunny they look delish. Mine always turn out hard as rocks. I havent made yours but what’s keeping them from becoming hard? Is it the baking powder? Do you fridge the dough?
Lisa my guess would be the amount of butter in the recipe plus the baking. The instructions… Bake on the center rack for 11 to 13 minutes until golden but still moist underneath cracks on top of the cookie. I hope you try them, they are delicious!

Can old fashioned oats be used instead?

Sandy you can make quick oats by putting old fashioned oats in a processor and pulsing them a few times. Quick oats is just old fashioned oats broken down some. But yes you could use old fashioned oats.
Hi CeLee, you could cut the raisins back to 1/2 cup and add a half cup chocolate chips. How many chocolate chips does he want in the cookie? I don’t think it would hurt to add 1/2 cup to the recipe and still keep the raisins 1 cup.
I added walnut flavour instead of vanila! Made a great cookie even more tasty.

Best oatmeal cookie recipe ever!!! The only change I’ve ever made is that I always buy salted butter, so I add less salt to the batter. I only add 1/2 tsp to the recipe.
