This delicious and easy to make Nine Inch Peach Cake uses fresh peaches and it’s the perfect size for two people.
Every time I make a cake like this I think about my Dad. He wasn’t a man who cared for frosting on cakes. But a cake like this? He would have put a big slice of this in a bowl and put either a little milk or a scoop of ice cream on it to eat it. It puts a smile on my face just thinking about it.
This is an easy peach cake recipe made with slices of fresh peaches and a very simple cake batter. If you love peaches, you’ll love this small cake.
How To Easily Take The Skins Off Of Fresh Peaches
You can make this small peach cake with peaches that either have the skins on them or off, whatever your preference is. To easily remove the skins from fresh peaches place water in a medium size saucepan and bring it up to a boil then turn the heat off.
Drop the fresh whole peaches into the hot water using a large spoon, let the peach roll around in the water for about a minute or two. Remove the peach from the water with a slotted spoon into cold ice water to stop the peach from cooking.
When I remove the skin from peaches this way I only drop one or two peaches at a time into the hot water in the pan. You can add as many as you can comfortably fit into the saucepan if you like. After the peaches are cool enough for you to handle them, just push on the skin of the peach with your fingers and the skin with come right off.

Ingredients
- 1 cup white sugar
- 1/2 cup butter, room temperature
- 1 cup all purpose flour
- 1 Teaspoon baking powder
- 2 eggs, room temperature
- 2 or 3 peaches, depending on how big they are, halved, pitted and sliced
- 1 Teaspoon lemon juice
- 1/2 Teaspoon white sugar
- 1/4 Teaspoon ground cinnamon
Before we start our peach cake, preheat your oven to 350 degrees and either spray a nine inch square baking pan with cooking spray or grease it lightly with shortening. Next…
Place the sugar and room temperature butter into a large bowl. Beat the ingredients together until they are well incorporated. Add the flour, baking powder and eggs to the bowl. Beat until the ingredients are well combined without over beating the batter. The batter will be thick.
Place the batter into your greased 9 inch baking pan. Spread the batter out in the pan evenly.
Place the fresh sliced peaches with or without the skin on them on the batter. Don’t crowd the peaches, they can touch if they are large slices, just don’t crowd them on top of the batter. Sprinkle the peaches with lemon juice. After you’ve sprinkled them with lemon juice, combine 1/2 Teaspoon of sugar and 1/4 Teaspoon of cinnamon together in a little bowl.
Sprinkle cinnamon/sugar mixture over the peaches. Place the cake into your preheated 350 degree oven for about an hour or until golden. Remove the pan from the oven to cool on a wire rack.

- 1 cup all purpose flour
- 1 Teaspoon baking powder
- 2 eggs room temperature
- 2 -3 fresh ripe peaches, halved and pitted
- 1 Teaspoon lemon juice
- 1/2 Teaspoon sugar
- 1/4 Teaspoon cinnamon
Instructions
- Preheat your oven to 350 degrees. Grease a nine inch bake pan with shortening or spray it with cooking spray.
- Cream the sugar and butter together in a large bowl. Add the flour, baking powder and egg to the bowl. Beat the ingredients together until they are well combined without over beating the batter. The batter will be thick. Spread the batter into your prepared baking pan. Cover the top of the batter with sliced peaches (either skin on or skin off , your choice). make sure to not crowd the peaches, they can touch each other in the pan, just don't over crowd them. Sprinkle the peaches with lemon juice. Combine the cinnamon and sugar in a small bowl, stir the ingredients together. Sprinkle the cinnamon/sugar mixture over the fresh peaches.Bake for 60 minutes or until golden on top. Remove the pan from the oven to a wire rack to cool.
