This Lemon Sponge Pie is an easy pie recipe with refreshing lemon flavor and light and airy texture. Lemon Sponge Pie makes a deliciously light treat.
The Pennsylvania Dutch are responsible for a lot of the flavors we enjoy in Pennsylvania. We love the sweet and sour flavors that you’ll find in recipes like Pennsylvania Dutch Hot Bacon Dressing, Red Beet Eggs, Sweet and Sour Salad Dressing, Chow Chow and Pepper Cabbage. It is also known for this special lemon sponge pie.
Amish and Mennonite women are well known for their baked goods. You can walk into any farmers’ market and find tables full of Whoopie Pies, Shoo Fly Pie, Apple Dumplings and this pie, Lemon Sponge Pie.
Lemon Sponge Pie has the perfect lemon flavor. I think it’s better than the best Key Lime Pie I’ve ever eaten. This is an easy, economical pie to make in that it uses few ingredients, ingredients you probably already have in your pantry. While baking, the pie separates into two scrumptious layers.
It makes a soft sponge-like topping while underneath a creamy delicious lemon filling.
Bake a taste of Pennsylvania Dutch goodness in Lemon Sponge Pie and ENJOY!
Lemon Sponge Pie
Ingredients
- 1 pie crust homemade or store bought
- 3 eggs separate, yolks from whites, separated
- 2/3 cup lemon juice
- 1 cup milk
- 1 1/2 cups sugar
- 1/3 cup flour
- 1/4 tsp salt
Instructions
- Preheat oven to 350 degrees. Roll your dough out and place into a 9 inch pie plate. Place pie plate on top of a baking sheet. Crimp edges. If using a pre-made crust, thaw before using.
- Beat egg whites in a large mixer bowl until stiff peaks form but not dry, set aside.
- Beat egg yolks, add the lemon juice and milk and beat until well incorporated. Add sugar, flour and salt; beat until smooth.
- Fold lemon mixture into egg whites, making sure that there are no lumps of egg white left in batter or white streaks.
- Pour into pastry-lined pie plate sitting on top of a baking sheet. Bake until golden brown, 45 to 50 minutes. Cool the pie down completely and refrigerate for a couple hours to let the filling set.Serve with sweetened whipped cream if desired

I found this Lemon Sponge Pie on Pinterest today and immediately made it! I changed 2 things: crustless (glass pie dish sprayed with Pam) and sugarless (Splenda for baking). It’s amazing. It’s so pretty too. It rose up above the pie plate just like a sponge should. Loved it. My sister lived in Indiana for a few years and fell in love with some kind of Amish milk pie. I bet I made a dozen versions before I gave up and decided that the taste had more to do with a memory! lol You totally just reminded me of that. 🙂

I just baked the lemon Sponge pie and it has a few deep cracks in the top. Did I overcook it?
I’ve never had that happen Roberta, but I’m going to guess that’s what caused the cracks in the top.

why does my crust in my lemon sponge pie never gets done??
I don’t know Joann, is it just this pie that the crust doesn’t bak all the way for you? I’ve never had a problem like that.
I have made this pie 3 times and each time it was a delicious success!
My family and guests loved it and devoured every single bit!
It has become our favorite pie and is now my”go to” recipe when
I want to make something that will impress! (TIP: I poured excess
filling in custard cups and baked for 10-13 min…..it makes a scrumptious
dessert topped with whipped cream!)

Do I need to blind bake the crust?
No you don’t Zina, just pour the filling into the unbaked pie crust. It’ll be just fine.
