Creamy Garlic Skillet Shrimp
Is there anything better than a fantastic dinner that’s not only delicious but easy to make? No, at least not for me, that’s what I call a definite winner in my book. Creamy Garlic Skillet Shrimp is the perfect weeknight dinner. Your busy, I remember those days. You work, you’ve got kids and a house to take care of. You’re tired when you get home and the last thing you need on a weeknight while trying to figure out who has what practice… (football, baseball , dancing lessons?) is making something that’ll keep you in the kitchen when all you want to do is put those aching feet up after work. This one’s for you Sweetie or …Mr Sweetie. We’re going to make this quick skillet dinner together so let’s gather the ingredients.
Creamy Garlic Skillet Shrimp Ingredients:
- 12 ounces cooked Fettuccine
- 3 Tablespoons butter
- 3 cloves garlic, minced
- One 12 ounce jar roasted red peppers
- 1 Teaspoon paprika
- 2 cups heavy cream
- 1 pound medium shrimp, peeled, deveined and tails removed
- 1 1/2 cups Parmesan Cheese, grated
- 1 Tablespoon parsley, chopped
We start the recipe by cooking 12 ounces of fettuccine according to the package directions, drain it and set it aside. Next, drain a 12 ounce jar of roasted red peppers and slice them into 1/2 inch thick strips and set them aside. Place 3 Tablespoons of butter in a large sauté pan over medium heat. Add the minced garlic, red pepper strips and paprika to the pan. Cook over medium heat while stirring occasionally until the peppers are heated through.
Add the cream to the pan and cook until the mixture comes to a boil. After it boils, reduce the heat and let the mixture simmer, stirring it occasionally until it is slightly thickened, about 3 – 4 minutes.
After the mixture has thickened slightly add the shrimp to the pan and cook until they are cooked through and firm, which will take about five minutes. Add the grated Parmesan and pasta to the pan. Salt and pepper to your taste and toss the mixture together until the pasta and Parmesan are incorporated and well coated. Plate this amazing dinner up and garnish with chopped parsley.

After it boils, reduce the heat to medium and simmer, stirring occasionally until mixture is slightly thicken about 3 to 4 minutes.Add the shrimp to the pan and cook until they are cooked through and firm, about 5 minutes. Add the cooked pasta and Parmesan Cheese to the pan. Salt to your taste and toss the mixture together until well coated. Sprinkle with parsley. Serve immediately.
