Do we ever have enough cabbage recipes in our recipe boxes? No, no we don’t. We’re going to fix that problem right now. This amazing Cabbage Casserole recipe has tons of flavor and it’s so easy to make.
My son and I couldn’t be more opposite as far as food goes. He’s a big vegetable eater, I’m a big fruit eater. Our fridge is usually filled with both fresh veggies and fruit to satisfy both our preferences. Because we always have both in the house, I’ve gotten him to eat more fresh fruits and he has encouraged me to cook and eat more vegetables. It kinda works out pretty good.
This delicious cabbage casserole was a winner with both of us. It has tons of flavor. The tender cabbage wedges topped with cooked onion, green peppers, tomatoes and melted cheese was amazing, but the best part is, it’s easy to make. Let’s gather the ingredients and make it together.
Cabbage Casserole Ingredients:
- 1 Cabbage, cut into 6 wedges with the core removed
- 1 onion, sliced thin
- 1 green bell pepper, thinly sliced into rings
- 1 Tablespoon white sugar
- 2 Tablespoons butter
- One 28 ounce can whole tomatoes, drained and broken up
- 1 Teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
Cabbage Casserole Recipe Steps
Recipe Step One
Preheat your oven to 350 degrees. Place about an inch of water into a large pot. Add a little salt to the water and place the cored cabbage wedges into the pot. Cover the pot with a lid and let the water come up to a boil. Boil the cabbage for about 10 minutes.
Recipe Step two
While the cabbage is cooking ,place the thinly sliced onion and green pepper rings in a medium size skillet along with 2 Tablespoons of butter and the sugar.
Recipe Step Three
Cook the onion and green peppers in the butter until the vegetables are tender. Stir the mixture constantly while it cooks. Stir in the drained tomatoes and salt and black pepper into the pan. Remove the vegetables in the pan off the stove to the side.
Recipe Step Four
Drain the cabbage you just boiled and carefully place the wedges in a greased 13×9 inch baking pan. Pour the vegetable mixture you made on the stove over the cabbage wedges. Sprinkle the grated cheddar cheese over all the ingredients. Bake the cabbage in your preheated 350 degree oven for about 30 minutes or until the ingredients are heated through and the cheese has melted.
Look at this, it tastes as good as it looks and it’s definitely…”What’s For Dinner?!”
