Blueberry Fool has a cloud-like texture that is filled with blueberry and lemon flavor. This blueberry dessert recipe is also very easy to make. The blueberry portion of the recipe can be made and refrigerated the day before you serve this delicious treat. On the day you plan on serving Blueberry Fool you will finish the recipe, and then place the Fool into dessert dishes to enjoy when you are ready. We are going to make Blueberry Fool together so you can see how easy this blueberry dessert recipe is to make. The first thing we need to do is gather the ingredients.
Blueberry Fool Ingredients:

- 3 cups fresh blueberries
- 1/3 cup granulated sugar
- 1 Teaspoon cornstarch
- 1/8 Teaspoon salt
- 2 Teaspoons lemon juice
- 1 1/4 cups heavy cream
- 2 Tablespoons powdered sugar
- 1 small carton of plain Greek Yogurt (5 – 6 ounce)
- 1 Teaspoon vanilla extract
We start the recipe by placing the blueberries, sugar, cornstarch, salt and lemon juice in a saucepan.
Next, we are going to cook the mixture on medium to low heat, stirring often, until the sugar dissolves, the berries are softened and the juices have thickened slightly. The cook time will be about 10 minutes. Take the blueberries out of the pan and place them into a bowl. Cover and refrigerate them for at least an hour or until cold. This step can be done a day ahead of when you are going to finish the recipe and use it for dessert.
On the day you plan on serving Blueberry Fool place the cream and powdered sugar into a large bowl. Beat the two together with an electric mixer until soft peaks form.
Add the yogurt and vanilla to the bowl and beat until medium peaks form and the mixture is creamy and thick.
Gently fold the blueberry mixture into the cream mixture until it’s barely combined. Your dessert will have streaks in it.
Divide the dessert into 6 dessert dishes, garnish with blueberries and either serve immediately or cover the top with plastic wrap and refrigerate for later in the day. The lemon and blueberry flavors are wonderful. The dessert just melts in your mouth. You could serve Blueberry Fool with crushed shortbread cookies right before serving to add a nice bit of crunch to this creamy treat. Blueberry Fool, so simple, so elegant ….so very very good. - one 5 or 6 ounce container plain Greek yogurt
- 1 Teaspoon vanilla
Instructions
- Combine the blueberries, white sugar, cornstarch, salt and lemon juice in a medium size saucepan over medium to low heat. Cook and stir until the sugar dissolves, the berries have softened and the juice has thickened slightly. Cook time will be about 10 minutes. You can prepare this step up to a day in advance of making the dessert. ( If making the day ahead, place the mixture into a bowl to cool down completely, then refrigerate covered.)Place the cream cheese and powdered sugar into a large bowl. Beat the two ingredients together with an electric mixer until you have soft peaks. Add the yogurt and vanilla to the bowl and beat until you have medium peaks and the mixture is creamy and thick.Gently and barely fold the blueberry mixture into the creamy mixture using a spatula. You will have streaks in the dessert. Divide the dessert between 6 dessert cups, garnish with fresh blueberries if desired or crushed shortbread cookies just before serving.
