Apple Walnut Cake with Vanilla Glaze
This is a moist, tender cake filled with apples and walnuts, it’s one of the best apple cakes I’ve ever made. It doesn’t have a lot of bells and whistles, and it doesn’t need it.
My first taste of the cake was without the Vanilla Glaze on it, it was delicious. I almost didn’t put the glaze on because I loved it so much without it.
I drizzled a little on my slice just to see what it would taste like. The glaze adds a touch of sweet. You’ll notice when you look at the glaze ingredients it doesn’t make a lot. There’s just a touch to drizzle on the top. I served this to company tonight for dessert.
I decided I would apply it to each slice if the person wanted it, they ate the cake without it and loved it! There aren’t to many cakes you can say taste good without a frosting or glaze, this one does. Apple Walnut Cake with Vanilla Glaze
Ingredients
- Preheat oven to 325 degrees. Grease a 13x9 inch baking pan with shortening.
Dry Ingredients
- 2 1/4 cup all purpose flour
- 1 Tablespoon cinnamon
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt

- 3/4 cup white sugar
- 1 cup light brown sugar
- 3/4 cup vegetable oil
- 1 teaspoon vanilla
- 3 eggs
Stir ins
- About 3 cups finely chopped apples peeled, cored.
- 1 cup chopped walnuts
Vanilla Glaze
- 1/2 cup confectioners sugar
- 1/4 teaspoon vanilla
- 2 - 3 Tablespoons milk
Instructions
- 1. Combine all the dry ingredients in a large bowl, stir together to combine.
- 2. In the bowl of an electric stand mixer combine the vegetable oil, white sugar, light brown sugar, vanilla and eggs. Beat until well combined.
- 3. With the mixer on low, add the flour mixture until just incorporated. Stir in the apples and walnuts until just combined.
- 4. Pour the cake batter into prepared pan, smooth to edges of pan. Bake at 325 degrees for 45 - 50 minutes or until tests done with a toothpick. Cool on a wire rack.
For the Vanilla Glaze
- Whisk ingredients together until smooth. Drizzle on top of cake or individual slices.
