An easy, delicious appetizer that takes no time at all to make. Perfect for parties and football games!
Marinated Cheese Peppers and Olives
Minimal work, fantastic results, I mean seriously, what more could you ask for in an appetizer. Because this travels well, you can serve it with your favorite crackers and take it to an office party, tailgating or Sunday football games.
But I’ve got to tell you, the way my son shoveled this in, it would also be a fantastic side dish. He didn’t even bother to use the crackers , a spoon couldn’t get it into to his mouth fast enough.
The ingredients are simple.
- cheese
- olives, black and green
- fresh red pepper
- spices
- vinegar
- fresh minced garlic
- olive oil
There’s nothing about this delicious appetizer that requires expensive ingredients. I buy store brand blocks of cheddar cheese and slice, grate or cube as I need it. When I need olives, I go to the dollar store and get them on sale.
So in other words, this can be as cost effective or as extravagant as you want it to be. Splurge on olives in the gourmet section of the grocery store and buy a more expensive block of cheese if you like, but it’s not necessary.
How easy is this recipe to make? After you mince the garlic, cut the red pepper into pieces and cube the cheese you throw it into a bowl with the other ingredients , mix and refrigerate for at least four hours. Boom, your done.
The only hard part about making Marinated Cheese Peppers and Olives will be keeping everybody’s fingers out of the bowl while it marinates. Whether you use this delicious mixture as an appetizer served with crackers or a side salad for dinner this is definitely a keeper. Enjoy!

Marinated Cheese Peppers and Olives
Ingredients
- 1/4 cup olive oil
- 3 cups Cheddar cheese, cubed
- 1 large Red Bell Pepper, cut into pieces
- One 14 ounce can black olives
- 1 cup green olives with pimentos
- 1 Tablespoon white vinegar
- 1/2 Teaspoon dried basil
- 1/2 Teaspoon dried oregano
- 1/2 Teaspoon minced garlic
Instructions
- Place all ingredients in a large bowl, toss to combine. Cover and refrigerate 4 hours or overnight. Toss gently several times during the marinating time.

This was very tasty! I used jarred red peppers and Swiss cheese as that’s what I had. Also I halved the olives so they wouldn’t roll off the cracker! Quick and easy appetizer.
