Soft and Chewy Oatmeal Raisin Pecan Cookies
When I told my friend that I loved to bake, the first question she asked me was…can you make oatmeal cookies? Oatmeal cookies with raisins and nuts in them?
Yes I can make them, my only probably was I didn’t have a recipe that I liked. Up until now, every recipe I tried yielded oatmeal hockey pucks.
Cookies you’d have to dunk to make soft. I wanted an oatmeal cookie recipe that would give me what I love about a fantastic chocolate chip cookie recipe, a soft, chewy cookie.

Soft and Chewy Oatmeal Cookies With Raisins and Pecans
Delicious soft and chewy oatmeal cookies the whole family will love!
Servings: 36
Ingredients
Wet ingredients
- 1 cup unsalted butter softened
- 1 cup sugar
- 1 cup dark brown sugar firmly packed
- 2 large eggs
- 2 teaspoons vanilla
Dry Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
Stir in
- 1 cup raisins
- 1/2 cup pecans
- 3 cups quick oats
Instructions
- Preheat oven to 350 degrees. Cookie Sheet sprayed with nonstick baking spray or lightly oiled.
- 1. In a large bowl, whisk all the dry ingredients together and set aside.
- 2. In the bowl of an electric mixer, combine the wet ingredients until just incorporated on low speed. On medium speed, cream the wet ingredients until light and fluffy and light in color.
- 3. Stir the dry ingredients into the wet ingredients until just incorporated and no flour is visible.
- 4. Stir in the quick oats,raisins and pecans to the dough.
- 5. Measure out a level 2 Tablespoons of dough ( I have a 2 Tablespoon measuring spoon I use). Place the dough on the baking sheet sprayed with nonstick spray or greased lightly with oil. Bake on the center rack for 11 to 13 minutes until golden but still moist underneath cracks on top of the cookie. Remove from oven, let sit on the cookie sheet for 2 minutes, remove to cooling rack to cool completely.

I mixed the ingredients by hand and omitted the 1 cup of sugar. They still came out delicious though!!!! They are a bit more cakey than chewy though, could it be because of the omitted sugar?

Very good recipe, nice & soft/chewy. The only thing I felt missing is the cinnamon & cloves as in the traditional recipes. The spices add that extra pop of flavor. Thx for sharing!

I have made these cookies 3 times in just as many weeks(I reduced the recipe to 18 cookies since it’s just my husband and I) and they are amazing! My husband isn’t a fan of oatmeal cookies and he likes them. I freeze some of them to enjoy the whole week long. By the weekend it’s time to bake another batch. Great recipe. Thank you for sharing.
OMG!! This recipe is amazing. The only thing I did different is soak the raisins in hot water while preparing the dough. I didn’t have the extra time for the soak. This recipe is a keeper.

Have made these cookies several times, these cookies, they are amazing. I add a little cinnamon and a teaspoon of instant espresso, can’t taste it just gives them a something in the background. They disappear Everytime I take them somewhere. This makes a big batch and only my husband and me, will the dough balls freeze.
I soaked the raisins, added a bit of cinnamon and used whole oats, not quick oats. I would cut back on the butter a tiny bit as they spread a little too much even after the dough was refrigerated over night. But, they are delicious. I bake at very high altitude, so that is always a challenge!
Hi Bunny! I’ve had a similar recipe for years & I can attest they are amazing cookies that everyone loves! I e tried yours only because my recipe only uses 1-1/2 cups of flour..mine have a nice spread & not so puffy which my hubby prefers. Also added cinnamon & splash of allspice. Didn’t have raisins so subbed craisins. If anyone really likes cheery oatmeal cookies, you’ll LOVE this recipe. No hockey pucks here, lol! Thank you Bunny, love your site!

Just made the cookies. They came out great! My husband will be thrilled when he gets home. I used self rising flour, omitting the baking powder and salt. I also used sugar in the raw instead of white sugar. They are delicious. Thank you for this recipe. I’m keeping it as my oatmeal cookie recipe standard!

The perfect oatmeal cookie! I subbed walnuts for pecans because that’s how my mom used to make them. I also added a bit more flour as I’m just above 4,000 feet. They’re delicious!!!
