Oven Roasted Parsley Potatoes
I’ve been making Parsley Potatoes for years using canned potatoes. They pale in comparison to Oven Roasted Parsley Potatoes. Red Potatoes are tossed in a mixture of butter, diced onion and garlic, then roasted in a cast iron skillet or baking dish.
The interior of the roasted red potato has an almost creamy texture. The outside of the potato that’s been basking in butter and seasonings becomes golden, like browned butter golden. What an incredible combination of textures and flavor.
I decided to make this recipe in a cast iron skillet. You can definitely use a baking dish if you don’t have one. The skillet enabled me to melt the butter, saute the onions and garlic and then toss the potatoes in and put the pan straight into the oven. I turned the potatoes about half way through the baking time so as much of the potato as possible would get browned.
If you don’t normally have fresh garlic, you can substitute it with garlic powder. The same thing goes for the onion. Use onion powder. You can add a little twist to the potatoes by grating Parmesan cheese over the top when they come out of the oven. Oven Roasted Parsley Potatoes
Ingredients
- 1/2 cup butter
- 8 red potatoes cut into quarters
- 1 small onion diced small
- 2 - 3 Tablespoons fresh parsley chopped
- 1 garlic clove minced
- salt and pepper to taste
Instructions
- Preheat oven to 375 degrees
- Place the butter in a cast iron skillet on top of the stove. Add the onion to the pan. Saute on low just until the onion has softened, add the garlic, cook and stir 1 more minute. Add the potatoes, toss to coat well with the butter mixture. Place the cast iron skillet with the potatoes in the preheated oven. Bake at 375 degrees for 45 minutes (turning the potatoes with a spatula once halfway through baking) or until golden brown and softened. Season with salt and pepper, sprinkle with chopped parsley.
- If using a baking dish - melt the butter in a saute pan, add the onion to the butter. Saute until onion is softened, add the garlic, stir and cook 1 more minute. Add the potatoes to the saute pan, toss to coat. Place the potatoes into a baking dish, place the baking dish into the oven, bake at 375 degrees for 45 minutes ( turning potatoes once with a spatula halfway through baking) or until golden brown and soft. Season with salt and pepper, sprinkle with chopped parsley.
