Lime Pineapple Fluff
Cool, creamy, easy to make and “no bake” are the words I want to hear when we’re talking about summer desserts. Lime Pineapple Fluff fits that description to a T.
This is soooooo good! The lime gelatin and the pineapple give you a nice citrus flavor. The chopped pecans add the crunch while the pears and whipped topping make it smooth and creamy.
You can cut this into squares to serve or scoop it out into dessert dishes. I went with scooping, my sweet son attacked it with a spoon when I wasn’t looking so I just went with it. Lime Pineapple Fluff
Ingredients
- one 20 ounce can unsweetened crushed pineapple, drained well
- one 15 ounce can pear halves
- one 8 ounce Tub frozen whipped topping,thawed
- 3/4 cup pecans,chopped
- 1/4 cup pecans, chopped, for garnishing the top
- one 8 ounce package cream cheese,softened
- one 3 ounce package lime gelatin
Instructions
- Drain the pears placing the juice in a small saucepan., set the pear halves aside. Bring the pear juice to a boil, remove from the heat and add the lime gelatin. Stir until the gelatin is completely dissolved.Cube the cream cheese and place in a food processor along with the pear halves. Process until smooth. Remove the mixture from the food processor to a large bowl. Stir in the gelatin until well combined. Stir in the crushed pineapple and 3/4 cup chopped pecans. Fold in the whipped topping. Pour the mixture into an ungreased 13x9 inch pan, sprinkle the 1/4 cup chopped pecans over top as a garnish. Refrigerate until firm.

Cool and refreshing on a really hot day. Easy to make as well. I have not found a single recipe I did not like on this site.
