Lemon Pudding Cake has a very light cake topping that conceals a smooth, creamy, lemon pudding underneath. It’s making me crazy just thinking about it.
Lemon Pudding Cake
Lemon is the perfect flavor for Spring and Summer. It has this light, bright flavor that pairs so well with just about any fruit you can think of. I love using it to bake with. Lemon Pudding Cake is not only delicious but very easy to put together. We’re going to go through the recipe step by step just in case we have any new bakers . Are you ready? Here we go!
The first thing we have to do is separate the eggs. What does “4 eggs separated” mean in a recipe? It means you separate the egg whites from the yolks. You can use a little gadget like the one above. If you don’t have that little gadget, cup your hand with your fingers slightly apart. Crack the egg into your hand, keeping the egg yolk in the palm of your hand while letting the egg white sift through your fingers into a bowl. Sound gross? Nah, I’d rather do this than use the gadget, it’s quicker!
Place the egg yolks , lemon zest, lemon juice and melted butter into a large bowl, whisk to combine, set aside.
In another bowl place the sugar, flour and salt, stir to combine. Whisk half the flour mixture into the egg mixture, whisk in half the milk, whisk in the remaining flour mixture, then whisk in the last half of the milk. Your pudding cake batter should be smooth.
Whip the egg whites until soft peaks form. Gently fold the egg whites into the batter with a rubber spatula.
Pour the batter into a buttered, 8 inch glass baking pan or dish. Place a tea towel in the bottom of a roasting pan. Place the 8 inch baking dish with the batter on top of the towel. This insures that your baking dish isn’t going to be sliding around the pan when you pour the hot water into it.
Pour hot water into the roasting pan until it’s almost half way up the side of the 8 inch pan with batter in it. Bake in a preheated 350 degree oven for 45 minutes or until the middle of the pudding is set. The top of the cake bakes up to a gorgeous golden brown while the sides of the cake separate slightly from the dish.
The pudding is thick and absolutely WONDERFUL! The cake portion is light and fluffy. Put the two together and you’ve got one amazing dessert. Enjoy!

- 1/3 cup lemon juice
- 1 Tablespoon butter melted and cooled slightly
- 1 cup sugar

- 1/2 Teaspoon salt
- 1 1/2 cups milk
- Hot water for the roasting pan
Instructions
- Pre heat oven to 350 degrees. Butter an 8 inch glass baking dish.

- 3. Whip the egg whites until soft peaks form. Gently fold the egg whites into the batter.
- 4. Pour the batter into a buttered 8 inch glass baking pan or dish. Place a tea towel in the bottom of a roasting pan. Place the 8 inch baking dish with the batter on top of the towel. This insures that your baking dish isn't going to be sliding around the pan when you pour the water into it.. Pour hot water into the roasting pan until it's almost half way up the side of the 8 inch pan with batter in it. Bake in a pre heated 350 degree oven for 45 minutes or until the middle of the pudding is set. Remove the 8 inch glass pan from the roaster to a cooling rack. Cool completely, serve. Refrigerate leftovers.
