This is a chicken dinner I make for Paul and I a lot. It’s ridiculously easy and full of flavor. When I make it, I usually bake more chicken than we’ll eat that evening so we have leftovers for lunch the next day to put in a salad or eat just so. How easy is it? If you’ve got a bottle of Italian dressing this chicken is but an hour away from being dinner.
When I first started making this recipe I would marinate the chicken in the dressing and bake. Then one day time had gotten away from me and dinner needed to be made fast , there was no time to marinate! I decided to put the chicken in the baking pan, pour the Italian dressing over the chicken and let it bake for an hour. It was so tender and delicious I never went back to just marinating it again. If you’re worried about calories try using fat free or low calorie Italian dressing.
Italian Potatoes side dish is just as easy to make as the chicken. Cut baking potatoes in half or into wedges. Place them in a baking dish, skin side down. Drizzle the Italian dressing over the potatoes and bake for 30 minutes. After 30 minutes flip the potatoes over so the cut side is down, bake 30 more minutes. Turn the potatoes cut side up and sprinkle with Parmesan cheese, bake until cheese is melted. Once again, fat free or low calorie dressings can be used for the potatoes as well.
