Fried Pork Chops with Milk Gravy
Pork Chops dipped in buttermilk, dredged in seasoned flour and fried to golden perfect. You’d think we would have stopped there but… no. Making and adding a homemade milk gravy to those delicious chops added another layer of flavour and kicked it up to comfort food status.
The pork chops I used were large and very thick. Since our chops were ridiculously thick we decided to pound them slightly to thin them. We wanted them to be done on the inside and still achieve a golden brown coating on the outside. It worked perfectly.
The Milk Gravy…
After the pork chops are fried, drain the oil from the pan reserving 1/4 cup. Don’t wash or remove any bits from the pan , that all contributes to the flavor of the gravy. The Milk Gravy comes together quickly. After whisking the flour, salt and pepper into the oil in the pan it’s just a matter of adding the milk slowly while whisking and waiting a few minutes until it thickens slightly.

Fried Pork Chops with Milk Gravy
Ingredients
- 4 one inch thick pork chops
- 2 Teaspoons salt
- 1 Teaspoon pepper
- 1/2 Teaspoon garlic powder
- 1/2 Teaspoon onion powder
- 1/2 Teaspoon paprika
- 2 cups flour
- 1 cup buttermilk
- 2 cups vegetable oil for frying
Gravy ingredients
- 1/4 cup reserved oil from frying the pork chops
- 1/4 cup flour
- 1/2 Teaspoon pepper
- 1/2 Teaspoon salt
- 2 cups milk
Instructions
- Combine the flour, salt,pepper,garlic powder, onion powder and paprika in a medium bowl. Stir to combine. Place the mixture on a large plate or low shallow bowl (a pasta bowl works well). Dip the pork chops in the buttermilk, coating both sides. Dredge the chops in the flour mixture coating well on both sides. Place the oil in a large saute pan. Heat the pan under low to medium heat until oil is hot. Place the chops in the pan, fry about 8 - 10 minutes on each side until chops are golden brown.
For the Milk Gravy:Remove all but a 1/4 cup oil from the saute pan. Don't wash the pan or remove any bits from the pan. Add the flour, salt and pepper to the oil, whisk until combined. Add the milk to the pan slowly, whisking while you pour. Cook and whisk until mixture is thickened. Spoon over pork chops and serve.
