Marinating meat before grilling it has two purposes. First, it gives it flavor , second it tenderizes the meat. Grilled Pork Chop Marinade does an excellent job of doing both.
The massive pork chops I brought home from the grocery store (they were the size of steaks) were marinated overnight. The chops were grilled for about 15 minutes. The flavor of the marinade plus the flavor the grill gave the chops was excellent. They were tender, juicy and delicious.
There are a couple of things you want to remember when marinating meat.
- Always marinate meat in the refrigerator, marinating at room temperature runs the risk of harmful bacteria forming while the meat marinades.
- After the meat has marinated, allow the meat to come to room temperature before placing on the grill. My husband is a stickler for this one, the meat is always room temperature before it hits the grill.
- Never marinade meat in a steel bowl or ceramic bowl. According to Everything2 the acid in the marinade can react with a metal bowl, both damaging the bowl and giving the meat a metal flavor. Acids can also react with a ceramic bowl, potentially leaking the glaze of the bowl into the marinade. This is particularly dangerous if the glaze contains lead. Always use a clear glass bowl to marinade.

Now that we know the Do’s and Don’ts of marinading, let’s gather the ingredients for our delicious pork chop marinade and make it together.
Grilled Pork Chop Marinade Ingredients
- 1 Teaspoon onion powder
- 1/2 Teaspoon Oregano
- 1/3 cup olive oil
- 1/4 cup lemon juice
- 1/4 cup soy sauce
Place all the marinade ingredients into a bowl and whisk them together.
Place the pork chops in a plastic ziplock bag big enough to hold the chops and marinade. Add the marinade to the plastic bag. Zip it almost closed, squeeze all the air out of the bag and completely close the bag. Place the bag in the refrigerator and marinate chops overnight, turning the bag often to make sure all the surfaces of the chops are covered in the marinade.
When it’s time to grill – remove the chops from the bag, throw away any leftover marinade, plus the plastic bag. Let the chops come to room temperature before grilling. Grill chops 10 – 15 minutes, depending on the heat of your grill.

Oh I’ve marinaded meat less than that because of a lack of time but still wanting to use the marinade and it worked great! Thank you for taking the time to come back and comment Mary, I appreciate you!
Did you use a oven grill ?
Yvonne we have a gas grill butI also have a grill pan that I use alot to cook pork chops or steak on with this marinade. I cook them on top of the stove with the grill pan and they turn out fantastic. Either one will work just fine.
This Marinade was the best. I have a nightshade problem so this was great for my husband and I they came out tender and juicy and really really good. I did however add some garlic and left out the oregano still yummy.

I’m doing keto can I use monk fruit in place of brown sugar
I have not tried it yet, but that sounds great- let us know how it turns out please!!
I have used this recipe several times. It is very good!
I was a bit disappointed. I was expecting a little bit sweeter flavor and definitely a bit more moist. I used exact measurements and ingredients and it didn’t really come through. I broiled, rather than grilled, but I shortened the time to a total of 8 minutes, just to make sure I didn’t overcook the 1″ chops I had. I’ll add a bit more brown sugar, and shorten the time cooked. I have 2 more marinating so maybe tomorrow will be a better day.
