Crock Pot Granola
Crock Pot Granola – yet another delicious recipe you can make in the crock pot! The recipe is delicious, extremely easy and very versatile. After the sauce is made in a pot on the stove, it’s poured over the oatmeal and nuts in the crock pot and stirred to coat.
I cooked it on low for a little over 2 hours, stirring the oats every half hour. When the oats were done cooking , I added the coconut and dried cherries right to the crock pot, stirred it together and turned it out onto cookie sheets to cool. DELICIOUS!!
We’ve had it for snacks, used it as a topping for ice cream and ate it for breakfast. I’ve share it with neighbors who absolutely loved it. You’re going to love using your crock pot to make homemade granola! Enjoy!

Crock Pot Granola
5 cups old fashioned oats
3/4 cup extra virgin olive oil
1/4 cup brown sugar
1/4 cup honey
1/4 cup maple syrup
1 Tablespoon cinnamon
1 Tablespoon vanilla
1/4 Teaspoon salt
1 Tablespoon grated zest of an orange or lemon
1 1/2 cups shredded coconut ( can omit and use 1 1/2 cups of something else if you like)
1 cup chopped walnuts, or any other nut you like
1 – 2 cups dried fruit
Directions:
Place the old fashioned oats and nuts into the crock pot.
In a medium size heavy metal saucepan add the olive oil, brown sugar,honey,maple syrup cinnamon, vanilla, salt and zest. Cook over low heat until mixture boils. Let boil for one minute. Remove from heat and pour over the oats and nuts in the crock pot. Stir to coat thoroughly. Turn the crock pot to low heat, crack the lid of the crock pot to allow steam to escape. Cook for 2 hours, stirring every half hour. Remove the lid and add the coconut and dried fruit. Stir to combine. Remove granola from the crock pot and place on cookie sheets to cool. Store in air tight containers.
