Chocolate Bottom Banana Cake
Whether I am baking a cake, cookies or pies I always start the recipe by measuring out all the ingredients I need ahead of time. To prepare for this recipe I mashed the bananas, got the butter and egg out of the fridge so they would be room temperature and measured out all the dry ingredients. If I try to do this while I’m in the process of making the recipe, I run the risk of forgetting an ingredient. You do not want to forget an ingredient when making any chocolate and banana cake recipe, especially this one!
A million things can happen while I’m in the process of mixing a recipe together and I’m measuring ingredients as I go alone. The phone will ring, my son needs me to help him do something or I get a visitor. By the time I’m back in the kitchen to my recipe, I’m asking myself, did I already add the baking soda to the flour? So for me, it’s best that I measure out all the ingredients I need before I start the recipe instead of while I’m mixing the recipe. This is one of my secrets to perfection for my chocolate and banana cake recipe.
We start our Chocolate Bottom Banana Cake by placing the softened butter and sugar in a large bowl and beating them together until well incorporated.
Add the room temperature egg, mashed bananas, and vanilla to the bowl. Beat the mixture until well incorporated.
Place the flour, baking soda, baking powder, and salt together in a medium bowl, stir to combine and add to the banana mixture and beat until it’s incorporated well without over beating the batter.
Divide the batter in half. I didn’t actually measure the batter and divide it in half, I just eyeballed it.
Place the cocoa in one half of the batter you measured out,
Beat the cocoa in until it’s incorporated well without over beating the batter.
Place the batter with the cocoa in it into a greased 9-inch baking dish, spreading to the edges. Place the other half of the batter without the cocoa in it on top of the chocolate batter and spread gently to cover it completely. Swirl the batter together using a butter knife.
Sprinkle 1 cup of milk chocolate chips over the top of the batter. Bake at 350 degrees for 25 – 30 minutes or until cake tests done when a toothpick is inserted. Let the cake cool completely before serving.
Chocolate Bottom Banana Cake rises up nice and tall in the oven. The combination of chocolate and banana is amazing. I used milk chocolate chips to top the cake. If you prefer semi-sweet feel free to use those instead. Maybe you would prefer a little bit of crunch in the form of your favorite crushed nuts on top of the cake along with the chocolate chips. In that case, use a 1/2 cup chocolate chips mixed with 1/2 cup of your favorite nut sprinkled over the cake before baking.
Chocolate Bottom Banana Cake is easy and absolutely delicious, ENJOY!
