I don’t think I’ve ever been this excited about a casserole in my entire life! I wouldn’t be able to pick out one thing in it that I loved more than another.
The ingredients came together so perfectly that each bite was perfection. The biggest surprise though, were the sweet potatoes. They were magnificent combined with the other ingredients.
I used grated Gruyere and Swiss cheese in the casserole. Gruyere cheese can be a little pricey, if your budget doesn’t have room for that, use all Swiss Cheese instead.
This casserole uses pre cooked chicken. Using a rotisserie chicken would save you the step of cooking chicken for the recipe. I had a very large chicken breast that I poached in water on top of the stove which yielded the two cups I needed for the recipe.
Using a rotisserie chicken and pre baking the sweet potatoes would save busy working mom’s and grandma’s prep time the day you make it. I’m trying really hard to make this as easy as possible for you because I want you to make it. I want you to taste how absolutely magnificent this casserole is.
I want you to have the pleasure of tasting the melting Gruyere Cheese with the flavor of the Swiss cheese , sweet potatoes, chicken and spinach. Cheesy Chicken Sweet Potato Casserole

Ingredients
- 3 pounds sweet potatoes
- 1/3 cup butter
- 1/4 cup flour
- 1 envelope dry ranch dressing mix
- 1/4 Teaspoon pepper
- 2 cup Gruyere Cheese,grated
- 2 cup Swiss Cheese,grated
- 1 cup half and half
- 2 cups heavy cream
- 3 cups coarsely chopped fresh spinach
- 2 cups shredded cooked chicken
- 1/4 Teaspoon garlic powder
Instructions
- Preheat oven to 350 degrees. Grease a 13x9 inch glass baking pan.Wash sweet potatoes and pat dry. Poke holes in the sweet potatoes with a fork, place them on a cookie sheet. Bake for 60 minutes or until they can be easily pierced with a knife. Cool the potatoes 20 minutes, then peel them and cut each potato into 1/4 inch slices. Set aside.Combine both grated cheeses in a medium bowl, set aside.Melt butter in a medium saucepan over medium heat. Whisk in the flour,salt and pepper. Cook and whisk until mixture is smooth and bubbly. Gradually whisk in half and half and cream. Cook and whisk about 7 minutes until mixture is slightly thickened. Add the dry ranch dressing packet, stir to combine. Stir in 3 cups of grated cheese (you should have one cup of grated cheese left to sprinkle over casserole before baking). Whisk until cheese has melted.Place the sweet potato slices , cheese sauce, spinach and cooked chicken in a large bowl, toss gently to combine. Spoon into prepared baking dish. Sprinkle the top of the casserole with the remaining one cup grated cheese. Bake 25 -30 minutes or until cheese has melted and casserole is heated through. Let stand about 10 minutes before serving.

This is made in a 13×9 inch baking pan so I would think you would get 9 nice size serving from it Denise.
