Cheesy Broccoli Soup comes together quickly. Cooking the broccoli and sautéing the onion and garlic can be done ahead of time to make this soup extra easy for a busy mom. No one wants anything cheesy to be a difficult task- I try to make this cheese and broccoli soup recipe as simple as possible but as delicious as possible.

Cheesy Broccoli Soup Ingredients:
- 4 Tablespoons butter, divided
- 3 Tablespoons all purpose flour
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 3 cups broccoli florets
- 3 cups grated cheddar cheese
- 1/2 cup cream
- 1 Teaspoon garlic powder, if needed
- Salt and pepper to taste
- crumbled cooked bacon for a garnish
We start the recipe for your cheese and broccoli soup by cooking the broccoli florets in water until tender. Drain the florets well and set them aside. Melt one Tablespoon of butter in a saute pan over medium heat. Add the onions and minced garlic to the pan. Saute until the onions are translucent, set the mixture aside.
Next, place a 4 quart saucepan over medium heat. Add 3 Tablespoons of butter to the pan, cook until the butter has melted. When the butter has melted, add 3 Tablespoons of flour to the pan along with the butter. Whisk the two together until they come to a boil. Boil and whisk for 2 minutes to remove the flour taste. Slowly add four cups of chicken broth to the pan while you whisk. Keep whisking until the broth comes to a slow boil and thickens slightly. Add the onion and garlic that you sauteed earlier and the cooked broccoli florets to the pan. Stir to combine. Turn your stove burner down to low, continue to cook the mixture until the broccoli is heated through.
Turn the burner off and remove the pan from the stove. Slowly add the cheddar cheese by cupfuls to the pan while you stir.
When all the cheese has been added and melted add 1/2 cup of cream to the pan, stir to incorporate it. Add one Teaspoon of garlic powder to the soup if you think it needs it and salt and pepper the soup to your taste.

Turn the burner off, remove the pot from the stove. Slowly add cheddar cheese by cupfuls while stirring the soup. When it has all melted, add 1/2 cup cream to the pan. Stir to incorporate. Add 1 Teaspoon garlic powder if the soup requires it, add salt and pepper to taste. Serve immediately, refrigerate leftovers.

Truly the “best ever” broccoli cheese soup we’ve made in this kitchen, and we’ve tried a few internet-found recipes. Family of 7 including autism and 2 picky eaters, and everyone gave it 2 thumbs up. We modified to be gluten free, and used coconut cream as that’s what we had in the pandemic-pantry. Absolutely delicious.
