My hubby tolerates chicken….barely tolerates it I might add. He does have some recipes he’ll actually request, like chicken and waffles or a recipe for Honey Sesame Chicken that Giz posted on Equal Opportunity Kitchen… thank you, Giz! SO…when I made this recipe, and he actually liked it, I HAD TO post it!
This was very easy to put together, which I really like. The aroma of fried bacon and onions was absolutely wonderful!
You might want to try this if you have a “picky-chicken-eater” too…they might very well be surprised!
Bacon Chicken

Ingredients:
* 6 slices bacon
* 1 Tbsp. butter
* 1 Tbsp. olive oil
* 6 boneless, skinless chicken breasts
* 1 onion, chopped
* 3 cloves garlic, minced
* 1/2 tsp. salt
* 1/8 tsp. pepper
* 1-1/2 cups shredded cheddar cheese
Preparation:
Cook bacon in 12″ skillet until crisp, about 4-6 minutes. Crumble bacon and set aside. Pour bacon grease out of skillet, but don’t wash or wipe it. Add butter and olive oil to skillet. Saute chicken breasts in this mixture over medium heat, turning once, until chicken is cooked and no longer pink in center. Place chicken in ungreased 12×8-inch baking dish.
Cook onion and garlic in drippings remaining in skillet; cook until onion is softened, then stir in salt, pepper and cooked bacon. Spoon over chicken breasts and sprinkle with cheese. Bake at 350 degrees for 10-15 minutes until cheese is melted. Serves 6

Everything is so impressive and delicious. I’ve only come to love broccoli the past year but still my family have some issues as they don’t like the smell.
Can’t go wrong with bacon. I love broccoli and cauliflower and it’s two of the few veggies my kids will eat. I was just looking at homemade marshmallows yesterday–these look really fun!

Gorgeous fall meal – I’ll try anything with bacon! The casserole is fabulous – I know (she modestly said). I do something similar. But those marshmallows – blew me away!

Who could be picky about BACON Chicken? What a great idea. The casserole looks great too. And those marshmallows are so pretty. I have never tried making marshmallows before either but you are tempting me here!
I would be very happy with any one of these three delicious recipes. I am a HUGE chicken fan, and with the bacon, I know it’s super delicious.
Always good to see a new veggie dish (that’s a weak point in my repertoire), and the broccoli/cauliflower combo sounds very good with good color for the dinner plate.
Who doesn’t love marshmallows! A beautiful presentation; have not seen the spumoni ones like this before so they are extra fun!

I love making marshmallows! It is so fun. And oh my! That chicken…anything is great when it wrapped with bacon.
That is one fabulous dinner! My meat, vegetables and my dessert! If I only had the guts to make the marshmallows.
