Smothered Pork Chops
During the Summer months I plant enough green, red and yellow pepper plants to hopefully get me through the winter. It never happens though. I enjoy the flavors of peppers so much that I find every opportunity to use them whether I’m making breakfast, lunch or dinner.
With the freezer depleted of my Summer stash I was so happy to see my son come through the door with big , gorgeous red, yellow and green peppers he had gotten at the grocery store. At a discounted price I might add, 9 big fat peppers for $3.00. He’s quite the little shopper.
As the name of this recipe implies, center cut pork chops are smothered in peppers, onions and gravy. I used center cut pork chops, you can also use boneless chops or pork shoulder blade chops. There’s no reason at all why you couldn’t use chicken breast in place of the pork as well. Versatility is the name of the game in this house. Enjoy the flavors in this dish with the meat you have in your freezer. Smothered Pork Chops, it’s what’s for dinner, ENJOY!

Smothered Pork Chops
Ingredients
- 4 bone in center cut pork chops
- 1 cup flour
- 1 large red bell pepper ,sliced into strips
- 1 large green bell pepper, sliced into strips
- 1 medium onion, sliced
- 2 cups chicken broth
- 1/2 Teaspoon garlic powder
- 1/4 cup vegetable oil
- salt and pepper to taste
Instructions
- Season pork chops with salt and pepper on both sides. Dredge chops in flour. Place a large saute pan on the stove over medium heat. Place the oil in the pan. Place the pork chops in the pan and saute until golden brown on both sides.Remove the chops from the pan onto a plate and set aside. Saute the peppers and onions in the same pan you sauteed the pork chops in until tender. Add the chicken broth and garlic powder to the pan and return the pork chops to the pan as well. Cover the pork chops with the peppers and onions. Place a lid on the pan and simmer for 45 minutes on medium heat until pork chops are fork tender.

No mention of what to do with the garlic powder. If I simmered on med for 45 minutes the pork chop would be rubber!!

loved it. made some additions and just monitored the internal temp of the pork. added in some mushrooms and finished the pan off with a couple handfuls of fresh spinach. Threw in some whole garlic cloves while the chops were cooking. Put some shaved parmesan on top of the chops to melt. Great recipe to start off some inventive modifications too.
I absolutely love this recipe and I make it fairly regularly, it reminds me of something my Grandma used to make! Thank you!
