Fresh Spinach Salad with Dressing is loaded with goodies and absolutely delicious. It’s going to make you want to eat a whole lot more spinach. Bacon, hard boiled eggs and walnuts make the salad hearty enough to use as a side salad or dinner salad. If you’re not partial to nuts in a salad try using water chestnuts or croutons to add a little crunch.
The dressing is a very big part of why you’ll enjoy this salad so much. It’s sweet and tangy flavour will win you over. You’ll be using it on more than just spinach! Fresh Spinach Salad with Dressing
Ingredients
- 1 lb fresh spinach, rinsed and torn into bite size pieces
- 5 slices bacon cooked and crumbled
- 3 hard boiled eggs chopped
- 1/4 cup walnuts, chopped
Dressing ingredients
- 1 cup extra virgin olive oil
- 1/2 cup white sugar
- 1/2 cup white vinegar
- 2 Tablespoons Worcestershire Sauce
- 1/3 cup ketchup
- 1 small onion, chopped
Instructions
- Place all the dressing ingredients into a food processor (including the onion), process until smooth, the dressing will be slightly thick. Arrange spinach, chopped eggs, crumble bacon and walnuts on a plate. Drizzle with dressing and serve. Refrigerate leftover dressing.
