This is a chicken dinner I make for Paul and I a lot. It’s ridiculously easy and full of flavor. When I make it, I usually bake more chicken than we’ll eat that evening so we have leftovers for lunch the next day to put in a salad or eat just so. How easy is it? If you’ve got a bottle of Italian dressing this chicken is but an hour away from being dinner.
When I first started making this recipe I would marinate the chicken in the dressing and bake. Then one day time had gotten away from me and dinner needed to be made fast , there was no time to marinate! I decided to put the chicken in the baking pan, pour the Italian dressing over the chicken and let it bake for an hour. It was so tender and delicious I never went back to just marinating it again. If you’re worried about calories try using fat free or low calorie Italian dressing.
Italian Potatoes side dish is just as easy to make as the chicken. Cut baking potatoes in half or into wedges. Place them in a baking dish, skin side down. Drizzle the Italian dressing over the potatoes and bake for 30 minutes. After 30 minutes flip the potatoes over so the cut side is down, bake 30 more minutes. Turn the potatoes cut side up and sprinkle with Parmesan cheese, bake until cheese is melted. Once again, fat free or low calorie dressings can be used for the potatoes as well. Italian Baked Chicken
Ingredients:
1/2 to 3/4 cups Italian Dressing ( depending on the amount of chicken your making) Regular, Low Calorie or Fat Free
8 drumsticks or chicken thighs, washed and pat dry
Directions:
Preheat oven to 400 degrees. Place the chicken parts in a 13×9 inch baking pan. Drizzle Italian dressing evenly over chicken parts. Bake for 1 hour, until golden brown.
Italian Baked Potatoes
Ingredients
3 -4 medium size baking potatoes cut in half or into wedges.
1/3 cup Italian Dressing ( Regular, Low Calorie or Fat free)
1/3 cup grated Parmesan cheese or Reduced fat Parmesan Cheese
Directions:
Preheat oven to 350 degrees.
Cut baking potatoes in half or wedges. Place the potatoes in a 9 inch baking pan, skin side down, cut side up. Sprinkle with Italian dressing evenly. Bake 30 minutes at 350 degrees, flip the potatoes so the cut side is down, bake 30 more minutes, top with grated Parmesan and bake until cheese is melted.
I love grilling chicken with Italian salad dressing too. Makes a slightly crispy skin.

Bunny, this sounds good, easy, and flavorful — 3 things that will go a long way to helping me put a delicious dinner on the table in no time flat. Your recipe calls for drumsticks and thighs, but I imagine that chicken breasts will substitute nicely, since I am not a fan of any other part of the chicken, other than the breast 🙂 🙂 Thanks for another great recipe!
Yes Valerie, breasts will work just fine. We are just the opposite here and like the dark meat.
