Smoked Sausage Corn Chowder

Ingredients

  • 1 medium onion chopped, (about 1 cup)
  • 1/2 green pepper, chopped
  • 1/2 red pepper, chopped
  • 1/4 cup all purpose flour
  • 1/2 Teaspoon salt
  • 4 cups milk
  • 1 can (15.25 oz)whole kernel corn, drained
  • 1 package smoked sausage cut into 1/4 inch slices
  • 2 cups cooked cubed potatoes
  • shredded cheese for garnish

Instructions

  • Place the smoked sausage slices, onion and red and green pepper In the bottom of a Dutch oven. Cook until the onion and peppers are softened and sausage has released it's oil. There's no need to add butter or oil to the dutch oven, the smoked sausage will provide it.
    When the onions and peppers are softened and the sausage has browned slightly, sprinkle the flour, salt, and pepper over the mixture and stir to mix and cook for 1 minute. Add milk, stirring constantly, increase the heat to medium, stir until mixture comes to a boil and thickens. Add the corn and cubed potatoes to the Dutch oven. Reduce the heat and simmer till the potatoes and corn are heated through. Remove from heat, serve with grated cheddar cheese on top if desired.
