I took some what of a risk making this because my kids are not the biggest chicken breast fans. Given a choice, They’d head straight for the legs, thighs and wings of a chicken before they would even think about the breasts. To my surprise they absolutely loved it and said…”This is the way to eat chicken breasts!”
You really can’t help but love this recipe, it has so much going on in the form of flavor it’s unbelievable! The chicken breasts are stuffed with a filling made with Pepper Jack Cheese, cream cheese, green chiles and taco seasoning. Before it’s baked it’s brushed with a sauce made of taco seasoning and olive oil. And it doesn’t stop there, After it’s baked it is topped with Mozzarella Cheese and put back in the oven till the cheese melts. It’s served with chopped green onions and Cilantro. No boring chicken dinner over here honey, this ones loaded with flavor and we’re going to make it together so let’s gather the ingredients.
Stuffed Chicken Breasts Ingredients:
- 1 cup Pepper Jack Cheese , shredded
- 4 ounces cream cheese, room temperature
- one 4.5 ounce can chopped green chiles
- one package taco seasoning mix (1 oz size)
- 4 boneless skinless chicken breasts (about 6 to 8 ounces each)
- 2 Tablespoons olive oil
- 3/4 cup shredded Mozzarella Cheese
- 1/4 cup sliced green onion
- 1/4 cup fresh cilantro leaves
The first step in the recipe is to grab your cookie sheet and line it with foil. Take a wire rack and place it on top of the foil lined pan. You can either spray the wire rack with cooking spray or place a little vegetable oil on a paper towel and wipe the top of the wire rack with it.
The second step in this delicious Stuffed Chicken Breasts recipe is to make a pocket in the boneless skinless chicken breast to put our filling into. Starting with the thick side of the boneless breast, cut a 3 inch pocket to within 1/4 inch of the opposite side of the breast. We don’t want to cut the breast completely in half, leave a 1/4 inch attached on the other side of the breast.
Now that we have our pan and chicken breast ready, let’s make the filling. Place the Pepper Jack Cheese, cream cheese, chiles and 1 Tablespoon of Taco Seasoning in a medium bowl. Mix it all together until it’s well combined.
Place the filling inside the pocket we made in the chicken. Secure the filling in the chicken breast with a toothpick ( Remember to remove the toothpicks before you serve them) and place the breasts on the wire rack.
Place the remaining Taco seasoning and olive oil in a small bowl. Mix them together until they are well blended.
Brush the stuffed chicken breasts with the taco seasoning/olive oil mixture. Roast the breasts uncovered for about 30 – 40 minutes. Top the breasts with grated Mozzarella Cheese and bake an additional 5 minutes or until the cheese is melted. Top each of the Stuffed Chicken Breasts with chopped green onions and Cilantro before serving. Don’t forget to remove the toothpick!

Stuffed Chicken Breasts
Ingredients
- 1 cup shredded Pepper Jack Cheese
- 4 ounces cream cheese, softened
- 1 4.5 ounce can chopped green chiles
- one 1 ounce package package taco Seasoning
- 4 boneless, skinless chicken breasts (6 to 8 ounces)
- 2 Tablespoons olive oil
- 3/4 cup shredded mozzarella cheese
- 1/4 cup green onions, sliced
- 1/4 cup fresh cilantro leaves
Instructions
- Preheat the oven to 400 degrees. Line a cookie sheet with aluminum foil. Place a wire rack on top of the foil, spray the rack with cooking spray. If you don't use cooking spray, pour a little bit of cooking oil on a paper towel and rub it on the wire rack so the chicken doesn't stick to the rack. Cut a 3 inch long pocket into the thick side of the chicken breast making sure you don't cut through to the other side. we're making a pocket to stuff the breast. Place the shredded PepperJack Cheese, softened cream cheese, chiles and 1 Tablespoon of Taco Seasoning in a medium size bowl. Mix the ingredients together until they are well combined. Spoon the filling ingredients evenly into the pocket of each chicken breast pockets. Use toothpicks placed at the opening of the pocket to secure the filling in the chicken breast.Place the remaining Taco Seasoning mix and olive oil in a small bowl, mix it together until well combined.Place the stuffed chicken breasts on the wire rack. Brush the breast with the oil and Taco seasoning mixture. Place the stuffed chicken breast in the oven, bake uncovered for 30- 40 minutes. Top the chicken breasts with Mozzarella Cheese and bake an additional 5 minutes until the cheese has melted. Top each stuffed chicken breast with sliced green onion and fresh chopped Cilantro leaves.
