Lemon Blueberry Banana Oatmeal Smoothie
On any given morning whether it’s Winter or Summer, nine times out of ten, cooked oatmeal is my breakfast choice. Having an oatmeal smoothie for breakfast was like finding a new way to enjoy my oatmeal in the morning. And man did I enjoy it! The flavor combination of lemon and blueberry with banana is delicious. The oatmeal adds texture to the smoothie and makes it hearty. It’s perfect for breakfast or as a snack.
This recipe makes one nice sized portion of smoothie. I poured it into two glasses and shared it with my son. I really wasn’t prepared for how much he loved it! This man is a bacon and eggs breakfast kinda guy who stood there loving every spoonful he put into his mouth.
Don’t limit yourself to using just blueberries in the smoothie. You can switch the frozen blueberries out for whatever frozen fruit you have in your freezer. The low fat vanilla yogurt added sweetness and flavor while the lemon juice provided a fantastic brightness to the smoothie. Make sure your banana is nice and ripe to take advantage of all the flavour it has to give.
I am more than happy to have an oatmeal breakfast option that teeters on tasting like dessert for breakfast. Lemon Blueberry Banana Oatmeal Smoothie, this one’s a keeper, Enjoy!
