Homemade Turkey Sweet Potato Green Bean Soup
The Old School Ham Bone Bean Soup turned out better than I could have ever imagined. I decided that when our Christmas dinner was over I would try the same method of cooking for our leftover turkey carcass.
After dinner I removed all the meat from the turkey. The crockpot worked so well with the ham bone I used for the ham and bean soup that I decided to use it again. We had a small turkey, probably about 12 pounds. It wouldn’t fit into the crock pot without busting the carcass up a bit to make it fit.
You probably had a bigger turkey than we did, you may want to use a big stock pot or use turkey parts like the legs and wings in the crock pot. I added enough water to cover the carcass and added my stock ingredients, turned the crock pot on low and let it cook all night.
If using a stock pot you obviously can’t do that, put it on the stove on low and stew for a couple hours. I strained the broth, making sure all small turkey bones were removed. The broth was absolutely wonderful. Most of it was going in the freezer for later use, the rest was going to be used for soup for dinner.
I had sweet potatoes in the fridge and decided I’d cubed them up, boil them till tender and add them to the stock. I also had green beans that I had canned from our garden so in they went as well. This made an absolutely wonderful soup, we loved it!
What’s so great about soup is you can add or subtract what ever you want in it, don’t care for green beans? Add another vegetable or two in it’s place. But do use the sweet potatoes, they were delicious! The ingredient amounts are approximate, you can add or subtract according to you taste. it’s soup, make it your way! Enjoy!
Homemade Turkey Sweet Potato Green Bean Soup
Ingredients
Stock Ingredients
- turkey carcass or turkey parts legs,wings
- 1 Tablespoon minced garlic
- 3 stalks of celery
- 1 large onion diced
- 2 large carrots
- salt and pepper
- Enough water to cover carcass
Soup Ingredients
- 3 cups homemade stock or 2 cans canned turkey broth
- Turkey use as little or as much as you want, diced
- 1 small sweet potato cubed, boiled till tender
- 1 cup green beans canned or fresh, if fresh cook before adding to soup stock
- Salt and pepper to taste
Instructions
- Place the turkey carcass or turkey parts if using in a crock pot ( stock pot if not using crock pot). Add stock ingredients, add enough water to cover carcass. Turn crock pot to low and cook for 6 to 8 hours. If using a stock pot, turn on low and stew for 3 to 4 hours.
- Strain the broth, making sure that all small bones are removed from broth. Freeze broth or use for soup. For soup, add the cooked turkey ,sweet potatoes and green beans and season with salt and pepper to taste.
