I followed the recipe for the Chopped Apple Cake and just substituted pineapple chunks for the chopped apples. It was wonderful!!! Soft , moist and oh so gooey!! I made them into jumbo cuppies which made it even better. You can make this in a 9×13 in cake pan like the original recipe as well. After they were made I started thinking about what you could add into this to customize it…nuts, coconut?? The pineapple went so well in this recipe that I started thinking about what other variation I could make next. BANANA !!!!! Gooey Banana-licious Cuppies!!!

Gooey Pineapple-Licious Jumbo Cuppies
adapted from this recipe
Bake at 350 degrees
Ingredients
1 cup oil
2 cups sugar
2 1/2 cups flour
3 cups pineapple chunks, I used pineapple in syrup, about 1 1/2 cans pineapple
1 1/2 tsp baking soda
2 eggs
1/2 tsp salt
1/2 tsp vanilla
1 tsp cinnamon
With an electric mixer beat together the oil, sugar and eggs, add the pineapple chunks and vanilla. When mixing this you don’t want to mix the batter smooth, you want chunks of pineapple in the batter. Mix the dry ingredients together and add to the apple mixture , mix until just combined. Pour (the batter will be thick) into the jumbo cupcake tin with liner 3/4 of the way full.. Bake at 350 degrees for 25 to 30 minutes or until tested done.
Glaze :
Start making the glaze when the cake is about 10 minutes away from being done. The glaze will be poured over the cake from the oven.
1 cup brown sugar
2 tbls flour
3/4 cup water
3 tbls butter
Put all the glaze ingredients in a saucepan on low to medium heat and cook until it thickens and boils, let this boil for about 2 1/2 to 3 minutes , boil it until it looks caramely. You will see it get thick and the color will change to a soft caramel brown, this only takes a couple minutes after it boils. Stir to keep it from burning. Pour over hot cuppies from the oven.
I love anything with pineapple in it.

These look so gooey good. I was wondering, since I don’t have any of the larger cupcake holders nor the large pan, ( I only have the regular size muffin tins) do you think I could make them in the regular one? I’m fairly new to your site, but I love it and keep coming back. I already made the lemon sponge pie. It was so great and very lemony.
