Chicken Velvet Soup
Who would think that a soup made with such simple ingredients would be the most luscious soup to ever hit your taste buds. A soup that will make you stop in your tracks and savor every bite.
If I had to describe this soup to you I would have to say… think of it as a creamy chicken rice soup. Instead of having a clear chicken broth base, the soup has a creamy base made of chicken broth with milk and cream added. I’ve never had the pleasure of tasting anything quite like it. It’s a very hearty soup, perfect for Fall weather and football games.
The recipe makes a nice big pot of soup, if you’ve only got two of you in the house, it won’t last long. You can half the recipe to make a smaller portion to fit your needs. if you like. Chicken Velvet Soup, you definitely need to make and taste this delicious treat, ENJOY!
Chicken Velvet Soup
Ingredients
- 3/4 cup butter
- 3/4 cup flour
- 1/2 cup green pepper,diced
- 1/2 cup onion, diced
- 1/2 cup celery,diced
- 1/2 cup carrot, diced
- 6 cups chicken broth
- 1 cup milk, warm
- 1 cup heavy cream, warm
- 1 1/2 cups cooked, diced chicken
- 3/4 cups long grain rice
Instructions
- Add butter and flour to a large saucepan under medium heat. Stir until the butter melts, then WHISK the flour and butter together, cook about one more minute while you whisk. Add the diced green peppers, onion,celery, and carrot. Saute the vegetables about 5 minutes until softened.. Add 1 cup of milk, 6 cups of chicken broth and 1 cup cream to the saucepan. Add the rice to the pan. Bring to a boil , reduce heat and simmer until rice is tender. Add the cooked chicken and salt and pepper to taste. Serve immediately.
