Nine Inch Peach Cake

Ingredients

  • 1 cup white sugar
  • 1/2 cup butter (one stick) room temperature
  • 1 cup all purpose flour
  • 1 Teaspoon baking powder
  • 2 eggs room temperature
  • 2 -3 fresh ripe peaches, halved and pitted
  • 1 Teaspoon lemon juice
  • 1/2 Teaspoon sugar
  • 1/4 Teaspoon cinnamon

Instructions

  • Preheat your oven to 350 degrees. Grease a nine inch bake pan with shortening or spray it with cooking spray.
  • Cream the sugar and butter together in a large bowl. Add the flour, baking powder and egg to the bowl. Beat the ingredients together until they are well combined without over beating the batter. The batter will be thick.
    Spread the batter into your prepared baking pan. Cover the top of the batter with sliced peaches (either skin on or skin off , your choice). make sure to not crowd the peaches, they can touch each other in the pan, just don't over crowd them. Sprinkle the peaches with lemon juice.
    Combine the cinnamon and sugar in a small bowl, stir the ingredients together. Sprinkle the cinnamon/sugar mixture over the fresh peaches.
    Bake for 60 minutes or until golden on top. Remove the pan from the oven to a wire rack to cool.
