Roasted Red Grapes

  • 1 pound red seedless grapes cut into clusters and left on the stems
  • 4 Teaspoons honey
  • 1 Teaspoon extra virgin olive oil
  • 1/2 Teaspoon flaky sea salt
  • 1/2 cup mascarpone
  • 1 1/2 Tablespoons spiced or regular dark rum
  • 1 Teaspoon finely grated orange zest


  • Preheat your oven to 475 degrees and position the rack in the center of the oven.
  • Gently Toss the grape clusters, 2 Teaspoons of honey, olive oil, and salt in a large bowl. Spread the grape clusters on a large rimmed cookie sheet in a single layer. Turn the grapes over halfway through the baking time until they are collapsed, juicy and some what caramelized, about 15 minutes.
    While you wait for the grapes to roast - stir together the mascarpone, rum, zest and remaining 2 Teaspoons of honey in a medium bowl. When the grapes are done roasting remove the grapes from the cookie sheet to serving dishes. Serve warm with a dollop of the sweetened mascarpone.
