4 bacon strips
1large red sweet onion
16ouncespotato gnocchi
8 ouncesgrated mozzarella cheese
4ouncescrumbled blue cheese
1cup half and half
1/8Teaspoonpepper
Instructions
Preheat the oven to 350 degrees.
Cook the bacon strips in a skillet under medium heat. Remove the bacon from the pan to paper towels to drain them. Crumble the bacon when it's cool enough to handle. Reserve the bacon grease in the skillet. Add the sliced red onion to the bacon grease in the pan and cook the onion until it's tender and golden brown. Remove the pan from the heat. Remove the onions from the pan to paper towels to drain them.Place the potato gnocchi in a 1 1/2 quart casserole dish. Place the crumbled bacon, sauteed onions, 1 1/2 cups of Mozzarella cheese, blue cheese, half and half and black pepper in the casserole dish. Carefully toss all the ingredients together in the dish.Place the casserole dish in your preheated 350 degree oven and bake for 20 minutes. After baking for 20 minutes, remove the dish from the oven and gently stir the ingredients in the casserole dish. Sprinkle the remaining Mozzarella cheese over the casserole, place it back in the oven and bake 10 more minutes or until the top of the casserole is brown and bubbly. Remove it from the oven and let sit for 10 minutes before serving.
