Stuffed Chicken Breasts

This delicious Stuffed Chicken Recipe is packed full of Mexican flavor and very easy to make!

Ingredients

  • 1 cup shredded Pepper Jack Cheese
  • 4 ounces cream cheese, softened
  • 1 4.5 ounce can chopped green chiles
  • one 1 ounce package package taco Seasoning
  • 4 boneless, skinless chicken breasts (6 to 8 ounces)
  • 2 Tablespoons olive oil
  • 3/4 cup shredded mozzarella cheese
  • 1/4 cup green onions, sliced
  • 1/4 cup fresh cilantro leaves

Instructions

  • Preheat the oven to 400 degrees. Line a cookie sheet with aluminum foil. Place a wire rack on top of the foil, spray the rack with cooking spray. If you don't use cooking spray, pour a little bit of cooking oil on a paper towel and rub it on the wire rack so the chicken doesn't stick to the rack.
    Cut a 3 inch long pocket into the thick side of the chicken breast making sure you don't cut through to the other side. we're making a pocket to stuff the breast.
    Place the shredded PepperJack Cheese, softened cream cheese, chiles and 1 Tablespoon of Taco Seasoning in a medium size bowl. Mix the ingredients together until they are well combined.
    Spoon the filling ingredients evenly into the pocket of each chicken breast pockets. Use toothpicks placed at the opening of the pocket to secure the filling in the chicken breast.
    Place the remaining Taco Seasoning mix and olive oil in a small bowl, mix it together until well combined.
    Place the stuffed chicken breasts on the wire rack. Brush the breast with the oil and Taco seasoning mixture.
    Place the stuffed chicken breast in the oven, bake uncovered for 30- 40 minutes. Top the chicken breasts with Mozzarella Cheese and bake an additional 5 minutes until the cheese has melted. Top each stuffed chicken breast with sliced green onion and fresh chopped Cilantro leaves.
