Blueberry Fool

Blueberry Fool is an easy delicious dessert that is elegant, and so very smooth and creamy.

Ingredients

  • 3 cups fresh blueberries
  • 1/3 cup white sugar
  • 1 Teaspoon cornstarch
  • 1/8 Teaspoon salt
  • 2 Teaspoons lemon juice
  • 1 1/4 cup heavy cream
  • 2 Tablespoons powdered sugar
  • one 5 or 6 ounce container plain Greek yogurt
  • 1 Teaspoon vanilla

Instructions

  • Combine the blueberries, white sugar, cornstarch, salt and lemon juice in a medium size saucepan over medium to low heat. Cook and stir until the sugar dissolves, the berries have softened and the juice has thickened slightly.  Cook time will be about 10 minutes. You can prepare this step up to a day in advance of making the dessert. ( If making the day ahead, place the mixture into a bowl to cool down completely, then refrigerate covered.)
    Place the cream cheese and powdered sugar into a large bowl. Beat the two ingredients together with an electric mixer until you have soft peaks. Add the yogurt and vanilla to the bowl and beat until you have medium peaks and the mixture is creamy and thick.
    Gently and barely fold the blueberry mixture into the creamy mixture using a spatula. You will have streaks in the dessert. Divide the dessert between 6 dessert cups, garnish with fresh blueberries if desired or crushed shortbread cookies just before serving.
