Cobb Salad with Creamy Avocado Dressing


Cobb Salad Ingredients

  • 1 head romaine lettuce torn (or cut) into pieces
  • 6 slices thick cut bacon fried and crumbled
  • 15 - 20 cherry tomatoes ,cut in half
  • 4 hard boiled eggs, chopped
  • 2 oz bleu cheese, crumbled
  • 1 medium size cooked boneless chicken breast, sliced

Creamy Avocado Dressing

  • 2 Tablespoons Seasoned Rice Vinegar
  • 11/2 Teaspoons kosher salt
  • 1/2 Teaspoon black pepper
  • 1 avocado, diced
  • 1/4 cup sour cream
  • 1/4 cup heavy cream
  • 1/4 cup olive oil


Creamy Avocado Dressing:

  • Place all dressing ingredients ( except the olive oil ) in the bowl of a food processor. Blend until well combined and there are no lumps in the mixture.  With the food processor on, add the olive oil in a slow steady stream to the ingredients in the bowl.  Process until well blended. Remove from the food processor bowl and refrigerate covered until ready to use. 
  • Cobb Salad:
    Place the romaine lettuce on top of a large platter or dish, covering the surface.  Place each salad ingredient ( Bacon,cherry tomatoes,hard boiled eggs, bleu cheese and cooked chicken) in a single row on top of the lettuce.  Drizzle the Avocado Dressing over top or serve it on the side. Serve immediately or cover and refrigerate for later.
