Creamy Garlic Skillet Shrimp

  • 12 ounces fettucine
  • 3 Tablespoons butter
  • 3 cloves minced garlic
  • one 12 ounce jar roasted red peppers
  • 1 Teaspoon paprika
  • 2 cups heavy cream
  • 1 pound medium shrimp, peeled, deveined and tails removed
  • 1 1/2 cups Parmesan, grated
  • 1 Tablespoon parsley, chopped


Make The Pasta

  • Cook the pasta according to package directions. Drain and set aside.
    Drain the jar of roasted red peppers and slice them into 1/2 inch thick strips. Set aside.
    Melt the 3 Tablespoons butter in a large saute pan over medium heat. Add the garlic, red peppers and paprika. Cook , stirring occasionally until the peppers are heated through. Add the cream and bring to a boil.  After it boils, reduce the heat to medium and simmer, stirring occasionally until mixture is slightly thicken about 3 to 4 minutes.
    Add the shrimp to the pan and cook until they are cooked through and firm, about 5 minutes.  Add the cooked pasta and Parmesan Cheese to the pan.  Salt to your taste and toss the mixture together until well coated. Sprinkle with parsley. Serve immediately.
