Chicken Salad Melt Sandwich


  • 2 slices bread, whole wheat or white
  • 1/3 cup chicken salad
  • 1/4 cup cheese of your choice, grated
  • 2 Tablespoons melted butter
  • 2 slices tomato
  • 1 large leaf lettuce


  • Melt 2 Tablespoons of butter.
  • Brush the butter onto one side of each slice of bread.
  • Heat a saute pan under low heat.
  • Place both slices of bread, butter side down, into the pan.
  • Divide the 1/4 cup of grated cheese between the 2 slices of bread evenly.
  • Cook the bread until it's toasted to golden brown and the cheese has melted.
  • Remove the bread slices from the pan.
  • Divide the 1/3 cup (more if desired) chicken salad between both slices evenly.
  • Place lettuce and tomato on one slice of bread on top of the chicken salad, top with the other slice of bread.
  • Cut in half to serve.
