Apple Walnut Cake with Vanilla Glaze

Ingredients

  • Preheat oven to 325 degrees. Grease a 13x9 inch baking pan with shortening.

Dry Ingredients

  • 2 1/4 cup all purpose flour
  • 1 Tablespoon cinnamon
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt

  • 3/4 cup white sugar
  • 1 cup light brown sugar
  • 3/4 cup vegetable oil
  • 1 teaspoon vanilla
  • 3 eggs

Stir ins

  • About 3 cups finely chopped apples peeled, cored.
  • 1 cup chopped walnuts

Vanilla Glaze

  • 1/2 cup confectioners sugar
  • 1/4 teaspoon vanilla
  • 2 - 3 Tablespoons milk

Instructions

  • 1. Combine all the dry ingredients in a large bowl, stir together to combine.
  • 2. In the bowl of an electric stand mixer combine the vegetable oil, white sugar, light brown sugar, vanilla and eggs. Beat until well combined.
  • 3. With the mixer on low, add the flour mixture until just incorporated. Stir in the apples and walnuts until just combined.
  • 4. Pour the cake batter into prepared pan, smooth to edges of pan. Bake at 325 degrees for 45 - 50 minutes or until tests done with a toothpick. Cool on a wire rack.

For the Vanilla Glaze

  • Whisk ingredients together until smooth. Drizzle on top of cake or individual slices.
