Asian Noodle Salad


  • 1/4 cup soy sauce
  • 1/4 cup seasoned rice vinegar
  • 4 Tablespoons sesame oil
  • 1 Teaspoon red pepper flakes
  • 1 Tablespoon minced jarred garlic
  • 2 Teaspoons peeled grated fresh ginger
  • 3/4 lb linguine
  • 1 cup shaved or shredded carrots
  • 1 red pepper cut into strips
  • 1 green pepper cut into strips
  • 3 green onions sliced


  • In a large size bowl stir together the soy sauce,vinegar,oil, red pepper flakes,garlic and ginger. Set aside.
  • Cook the linguine according to package directions, drain and rinse under cold water. Add the linguine to the large bowl with the dressing ingredients and toss to combine. Add the carrots, green onion and green and red pepper. Toss to combine, cover with plastic wrap and refrigerate. Stir the salad occasionally to coat with the dressing. Refrigerate at least 4 hours or overnight.
